It’s officially slow cooker season, and this Coles pork chop ramen is the perfect winter's night meal 🍜

Slow cooker pork ramen
Serves 4 | Prep 15 mins | Cooking 4 hours 15 mins

Ingredients:
800g pkt Coles Pork Forequarter Chops
2 tbs miso ramen paste
2 tbs light soy sauce
1 tbs gochujang paste
4 cups (1L) Coles Liquid Salt Reduced Real Chicken Stock
5cm ginger, cut into matchsticks
2 garlic cloves, crushed
100g pkt Coles White Mushrooms, thinly sliced
4 spring onions, thinly sliced, white and green sections separated
2 bunches pak choy, cut into wedges
4 nests Coles Asia Egg Noodles Thick
2 soft-boiled eggs, peeled, halved
1 cup (150g) kimchi
Coles Asia Fried Shallots, to sprinkle
Coles Everything Bagel Seasoning, to sprinkle,

Method:
1. Heat a large frying pan over high heat. Season the pork. Cook for 2 mins each side or until golden brown. Transfer to the bowl of a slow cooker.

2. Combine the ramen paste, soy sauce and gochujang in a jug. Pour over the pork in the bowl. Add the chicken stock and 4 cups (1L) water to the bowl and stir to combine. Add the ginger, garlic, mushroom and white spring onion. Cover and cook on high for 4 hours (or low for 6 hours) or until pork is falling off the bone.

3. Add the noodles and cook for 15 mins or until noodles are tender.

4. Remove the pork from the slow cooker and remove and discard the bone. Coarsely tear into pieces. Add the pork and the pak choy to the slow cooker and cover for 5 mins or until leaves just wilt.

5. Ladle the soup and noodles among serving bowls. Top with egg and kimchi. Sprinkle with fried shallots, bagel seasoning and reserved green spring onion.
