Learning Beyond the Classroom

Our Agriculture students recently visited the processing facility at Jindabyne Wild Venison, continuing their exploration of the meat production industry following a visit earlier this year to a large commercial beef abattoir in Wagga Wagga.

During the visit, students observed the de-hiding process, organic inspection procedures and primary processing techniques used to ensure carcasses are handled safely and hygienically. They also learned about the history of the local meat industry from a former Jindabyne butcher, providing a fascinating perspective on how the industry has evolved in the region.
The hands-on experience continued with an exploration of animal anatomy, helping students connect classroom learning with real-world agricultural practices.

By experiencing both a large-scale commercial operation and a smaller specialist processing facility, students gained a broader understanding of modern meat production and the diverse practices used across the industry.

Experiences like these provide students with a deeper understanding of food production, animal science and the diverse career pathways available within the agricultural industry.

A big THANK-YOU to DOM, Banjo's Pat's in-residence Brewer for a Stella Winter Solstice dinner last night. Lamb moussaka entrees, Kosciuszko Wild Venison backstrap with celeriac puree and roast winter vegetables all matched with a superb compliment of Snowy River Way brews! Highly recommended!!!
