We produce small batches of delicious, hand-cut marmalades in our home kitchen. The use of citrus and other fruits is determined by seasonal availability and the addition of other ingredients – such as spices, fragrant herbs and liquor – depends on how the flavour of each marmalade develops during cooking, in order to enhance the finished product. Fruit is sourced locally where possible, including from our home garden and those of others.
