This Saturday we’re heading to the slopes of Mount Etna 🌋🍷

Few regions are shaped by so many variables.
Vineyards climb from around 450 to over 1000 meters above sea level, crossing ancient lava flows, changing exposures and more than 130 recognised contrade.
It’s this remarkable combination of altitude, aspect and geology that makes Etna one of the most complex and exciting wine regions in Italy.

It’s a place where every vineyard offer a different prospective, and every bottle tells another small part of a much bigger story.

Baller BTG - One of the most highly regarded white wines of Burgundy from famed producer Hubert Lamy. 2022 Domaine Hubert Lamy Saint-Aubin 1er Cru Derrière Chez Edouard ‘Haute Densité’.

Sourced from 0.7 hectares planted at a density of 30,000 vines per hectare over 20 years ago. The vines are at the top of the vineyard, where the soil is incredibly rocky and the mesoclimate is the coolest. They are spaced around 30cm apart from each other and the row width is one metre. Such a density yields a maximum of three tiny clusters per vine and the entire plot only yields enough juice to fill the contents of a barrel or two. This plot produces a completely different wine from the rest of the vineyard and subsequently led Lamy to increase the density in several other parcels around Burgundy.

What separates this cuvee from the others in the vineyard is: more, more, more! More intensity, salinity and mineral concentration—even though that is hard to imagine. It’s like the vines are sucking even more from their rocky soils, and the result is something totally unique. It’s no exaggeration to call this a wine of immense historical importance.

Sangiovese, considered one of the most fickle of all grape varieties, has a long history in its spiritual home of Tuscany. However, its rise to prominence and worldwide popularity has not been as straightforward as you may think. The importance of site, winemaking philosophy, Tuscany as a global mecca for tourism, wine trends and international investment have all played a part in its chequered story.

Yet there is no doubt that at its best it can produce world-class, complex and often age-worthy wines that are singular and truly speak of place. This Masterclass will be an exploration of what makes great Sangiovese in its spiritual home (and a little further afield), the stylistic differences that exist between appellation while also understanding its rise to prominence over the years.

Ninth-generation winemaker Dominique Portet founded his Yarra Valley estate in 2000, drawn to the cool-climate beauty of Coldstream and its potential to echo the finesse of Bordeaux.

It marked both the fulfilment of a lifelong search and the beginning of a distinctly Australian chapter in a lineage that began in 18th-century France.

The Fontaine wines represent some of the best value Rose, Chardonnay, Pinot Noir and Cabernets out of the Yarra Valley. We’ll have all of them open to try this Saturday.

Geelong winery Mulline has gone from strength to strength in recent vintages, with the quality of the wines firmly establishing them among the country’s finest producers.

Their newly released 2025 Single Vineyard Chardonnays and Pinots are a great example of this - precise, site-driven wines that clearly reflect the different corners of Geelong they come from.

This Saturday, we’ll be opening all the new releases. A rare opportunity to taste the wines side by side and explore the differences between Geelong’s sub-regions through Chardonnay and Pinot Noir.
