Ancient Mexico had a mainly vegetarian diet, with chillies as the main antioxidant and more than 40 different types of corn. Spanish colonization brought exciting new flavours from the Middle East and Europe, creating a fusion of food that is now considered a heritage of humanity by UNESCO. The essence of Mexican food is considered by ancient Mexico as a gift from above to lift your spirit and reach the heavens. How to Make Fresh Corn Tortillas at Home 🫓

1) 2 cups masa harina→ 16–18 tortillas

2) Mix 2 cups masa harina + approx. 2 cups lukewarm water (adding in small increments)

3) Knead for 4 minutes

4) Divide into 16-18 small balls

5) Press between plastic liner in tortilla press or use wax paper on 2 flat surfaces

6) Transfer on to non stick pan and cook 20–30 sec per side, flipping twice

7) Keep warm in a tortilla warmer (or a dry cotton cloth) then fill with your favourite taco filling
