Soufflè Pancake

3tbsp Flour
3tbsp Milk
2 eggs
3tbsp sugar
Maple Syrup to serve
Strawberry to serve
Butter to serve

Separate egg yolk and egg white
Mix flour milk and egg yolk stir until well incorporated
Beat egg white until peak while mixing sugar 1 tbsp at a time with 30 seconds gap.
Fold egg white mixture into the flour mixture
Put it on a pipping bag or just scoop
Fry then on a low heat non stick pan
Add a drop of water on the side then cover
Repeat on the other side
Check if there is no batter sticking on the side then it is cooked
Served with butter, strawberry and maple syrup

SAPIN SAPIN

2 cups glutinous rice flour
1 can coconut milk
1/2 cup sugar
Ube extract
Pandan extract

Mix glutinous flour, sugar and coconut milk
Divide the mixture in 3 equal amount
Put ube extract on one part and pandan extract on the other. Leave the last one as is.
Steam first layer for 15 minutes
Pour the 2nd mixture on top of the steamed mixture them steam again for 15 minutes
Pour the 3rd mixture on top of the steamed 2 mixture for 20 minutes
Cool it down
SERVE

CHEEZY ENSAYMADA

BREAD
2 cups flour
2 1/4 tsp yeast
1 cup milk
1/4 cup melted butter
3/4 cup sugar
3 egg yolks
1/4 tsp salt
1/4 cup butter to brush when shaping

TOPPINGS
1/2 cup butter soften
1/2 cup sugar
1 cup Cheddar Cheese

Direction
Proof yeast on a warm milk with 1 tsp sugar for 5 minutes
Mixed milk, butter and sugar and salt
Add 1/2 cup flour and the proof yeast
Add egg yolks and the rest of the flour
Mixed until it forms a dough
Roll the dough on a floured surface
Knead for about 7 minutes
Dough should be smooth and a little bit sticky
Rest the dough on a warm place for 2-3 hours
Roll the dough into a log shape and slice it on your desired size.
Roll the slice flat and brush it with softened butter
Roll them again in to a log and shape it.
Rest them again for 30 minutes to 1 hour
Preheat oven at 150C and baked them for 20 - 25 minutes
Let them cool down before adding the toppings
Brush them with the softened butter
Sprinkle with sugar then cheese
SERVE

SUMAN SA LIHIYA / SUMAN BULAGTA

2 & 1/4 cups glutenous rice
2 cups water
1 tsp lye water
Banana leaves

Soak rice with water for 3hours
Drain excess water
Stir in the lye water
Rest for 30 mins
Scoop 1/4 cup rice mixture to the banana leaves and wrap.
Simmer the suman for 60 - 80 minutes
Serve
