One of the charms of Japanese natural stones is the balance between refinement and feel.
They create a beautiful kasumi finish while still giving clear feedback to your hands during sharpening. Every stone has its own character, making the sharpening process itself deeply enjoyable.

There is also something deeply relaxing about sharpening on natural stones — the earthy, mineral scent almost feels like being near a Japanese hot spring. For many people, it becomes a form of meditation.

Awasedo are finishing stones, so the preparation before reaching this stage is extremely important. But when used properly, they are capable of achieving both beautiful polishing results and an exceptionally refined edge at a very high level.

Many of you already know Stefano and Fin, our dedicated sharpener/manager at Zan Shin. I feel incredibly lucky to be surrounded by people who share the same deep passion for Japanese knives as I do. This time, I decided to send Fin on the business trip in my place. Watching her gain hands-on experience at a knife maker—something she’s dreamed of—makes me so proud. It sounds like she’s coming back with plenty of exciting news, and I can't wait to share it all with you soon!

I just received Tanaka san’s VG10 Senko series Sashimi knife. Shigeki Tanaka san is one of Japan’s most renowned blacksmiths, hailing from Miki City, Hyogo Prefecture. After honing his skills in single-bevel knife making under a traditional craftsman in Takefu City, Fukui Prefecture, he established his own brand. Tanaka-san is among the rare artisans capable of crafting both double-bevel and single-bevel knives. His creations, particularly those bearing the Tanaka name, are highly sought after and exceptionally difficult to acquire overseas.
I teel incredibly fortunate to have had the opportunity to visit him and build a relationship. I received his signature knife series Harukaze, and he also crafted a Silver 3 Sashimi and Deba knife exclusively for our original brand, Zanshin. I’m thrilled to introduce his remarkable knives to you.
