🌾 Indian Superfoods | Episode 1: Ragi (Finger Millet)

One of my favourite ways to enjoy ragi is as a warm, comforting porridge, but that’s just the beginning. Ragi is incredibly versatile and can also be used to make pancakes, breads, rotis, dosas, muffins, cookies and so much more.

👇 Ragi Porridge Recipe (Serves 1–2)

Ingredients
• ¼ cup ragi flour
• 1 cup water
• 1 cup milk of your choice
• 1 tbsp LSA mix
• 1–2 tsp sweetener of your choice (I use jaggery, but honey or maple syrup work beautifully too)
• ½ tsp cardamom powder (optional)
• Fresh fruit, chopped nuts or seeds to serve

Method

1. Whisk the ragi flour with the water until smooth.
2. Cook over medium heat, stirring until it begins to thicken.
3. Add the milk, sweetener, LSA mix and cardamom. Continue stirring for another 3–5 minutes until smooth and creamy.
4. Pour into a bowl and top with your favourite fruit, nuts or seeds.

It’s the moment the oil begins to shimmer.

🌿 The mustard seeds start to pop.

Tempering is the simple process of briefly heating whole spices, herbs and aromatics in oil or ghee. This releases their natural oils, deepens flavour and brings a dish to life.
