Creamy Spinach Spirals...simply cream cheese mixed with lightly steamed Spinach, crumbled feta and pinenuts, spread on pre made puff pastry. Cut into strip's and bake. Delicious snack with drinks.

Flavour bombing dinner tonight..ohemgee! Chargha Chicken & Rustic Cauliflower Potato Mash from the fabulous new Skinnymixers Dinners 2 book. I didn't have time to marinade the chicken for an hour, so it went straight into the oven after I spatchcocked it and poured the marinade over....it was no injustice..so full of juicy flavour. The mash was next level too. All up inexpensive generous meal for 4.

This was delicious! I used San Remo Egg Tagliatelle and cooked for 8 mins instead of the 10mins per packet instructions. Next time I will also increase the water as the sauce was a little gluggy. I used chicken breast which wasn't dry at all but I like to use thigh generally. Fresh tomatoes could be replaced with canned.
