Father’s Day at home just got a whole lot sweeter 🍨🥧
Coles is bringing slow-cooker sticky date pudding energy for a warm, saucy dessert Dad will absolutely rate.

Slow-Cooker Self-Saucing Sticky Date Pudding
Serves 8 | Prep 10 mins (+ 10 mins standing time) | Cook 1 hour 40 mins

Ingredients:
​200g Coles Pitted Dates, finely chopped
​1 tsp Coles Bicarbonate of Soda
​1/2 cup (125ml) boiling water
​11/4 cups (200g) Coles White Self Raising Flour
​11/2 cups (295g) Coles Brown Sugar
​2/3 cup (160ml) Coles Full Cream Milk
​1 Coles Free Range Egg, lightly beaten
​50g Coles Unsalted Butter, melted
​1 tsp vanilla bean paste
​25g Coles Unsalted Butter, chopped, extra
​2 cups (500ml) boiling water, extra
​Coles Vanilla Ice-cream, to serve

Method:
1. Spray the inside of a slow-cooker bowl. Add dates, bicarbonate of soda and boiling water and stir to combine. Stand for 5 mins, stirring occasionally, or until water is absorbed.

2. Add the flour, ½ cup (110g) of the sugar, milk, egg, melted butter and vanilla to the slow cooker. Stir to combine. Use a rubber spatula to clean the sides of the bowl.

3. Sprinkle remaining sugar over batter and top with chopped butter. Using the back of a spoon, carefully pour extra boiling water into the slow cooker. Cover with lid and cook on high for 1 hour 40 mins or until a crust forms and top springs back when pressed with finger.

4. Serve pudding with ice-cream.

Onion bhaji plus Dark Tide Spiced Rum is giving street-food snack board, but make it sundowner 🍹🔥
Liquorland is serving bold Indian-inspired flavour with crispy spiced bites and a mule that knows how to keep up.

Ingredients
2 brown onions, sliced thinly
2 red onions, sliced thinly
2 spring onions, thinly cut on the angle
1 tbsp minced ginger
1 chilli, finely chopped
½ bunch coriander, stem sliced
1 tsp ground cumin
1 tsp ground coriander
1 tsp chilli flakes
1 tbs Garam masala
Sea salt
½ cup chickpea flour or besan
1 tbs cornflour
½ tsp bicarbonate of soda baking soda

Coriander dip
½ bunch coriander
1 garlic clove
1 green chilli, chopped
1tsp coriander powder
½ cup yoghurt
Sea salt

Method
In a bowl combine the onion, ginger, garlic, chilli, coriander, cumin and mix together.
Combined all the dry ingredients, mix. Sprinkle the dried ingredients over the onion mix and toss until coated evenly. Add in water a splash at a time until the flour is hydrated into a batter.
In a blender combine the coriander sauce ingredients and blend until smooth.
In a pot of 180deg c oil add the bhaji mix in golf ball sized pieces, cook until golden and crisp. Repeat until all the batter is cooked.
Serve the bhaji with the dipping sauce on the side.
