Maggie reaches for vino cotto all through winter - that bright, sharp lift it brings to everything. Roasted red onions with a drizzle of it? One of the great simple winter dishes.

For Maggie, a cheeseboard is about more than good food - it's about bringing people together. Years of entertaining inspired her love of quality cheeses, crisp crackers and rich quince paste, the simple essentials that make sharing easy.

On a cold windy wintery day we had the most amazing lunch in Piccadilly Valley at the home of a friend who is now a Medical Specialist but as a young man at University in the early 1990’s was a wine waiter during holidays at the Pheasant Farm Restaurant and with his wife Georgie has a truffle farm on their property run by his sister Emma who is a truly wonderful cook… We had been last minute ringins as there had been a cancellation of this truffle hunt and lunch Emma and Matt have during the season. The other guests at the lunch arrived earlier and actually went truffle hunting to great success with their dog and we arrived just as they returned to the kitchen with their ‘jewels’… The scent pervading the kitchen of truffles just dug out though it was truffles collected the day before that were part of this lunch. Emma’s food and Matt’s love of wine and the sheer generosity of the table gave everyone around the table a truly special occasion. Maggie x.

1. Emma with a few of the truffles
2. Gougère with Gruyère and shaved truffle
3. Matt with more truffles
4. Mushroom tart with grated truffle
5. Fresh pasta with truffle cream, butter, and parmigiano
6. Gelato with freshly grated truffle

A podcast in action as part of preparing for the celebration of what would have been Don Dunstan’s 100th Birthday on September 21st. It was so lovely to reminisce about my friendship over nearly 20 years through food with this great man. Pictured here with Caroline Winter (seated) and Nardy Zanos-Jardine. Maggie x

At the bottom of Maggie's garden stands a pear tree that's been there for 160 years - as broad as an oak, and still bearing fruit. It was planted to sweeten the water in the well beneath it.
