This ANZAC biscuit recipe is a crunchy‑chewy classic, perfect for sharing as we pause to reflect and say, Lest We Forget.
The best part? Every ingredient is available at Coles Mosman Park Shopping Centre, so you can grab what you need in a single shop and get baking. 🛒🍪
ANZAC Biscuit Recipe (makes 20)
You’ll need (from Coles):
• 1 cup rolled oats
• 1 cup plain flour
• 1 cup desiccated coconut
• ¾ cup caster sugar (or ½ cup caster + ¼ cup brown sugar)
• 125 g unsalted butter
• 2 tbsp golden syrup
• 1 tsp bicarbonate of soda
• 2 tbsp boiling water
• Pinch of salt
How to make:
1. Preheat oven to 160°C (fan 140°C). Line 2 trays with baking paper.
2. Mix dry: In a large bowl, combine oats, flour, coconut, sugars and salt.
3. Melt & fizz: In a small saucepan, melt butter with golden syrup over low heat. 4. In a cup, stir bicarb into boiling water, then add to the butter - it will foam.
5. Combine: Pour foamy mixture into the dry ingredients and stir until evenly combined.
6. Shape: Roll level tablespoons into balls, place on trays and flatten slightly (leave room to spread).
7. Bake: 12–15 minutes until deep golden at the edges. Cool on trays to set, then transfer to a rack.
Serving tip: Perfect with an afternoon cuppa. Storage: Airtight container up to 1 week.
