Sue is a qualified chef with over 20 years of experience working in London restaurants who learnt the art of chocolate making under the direction of master chocolatier Paul A. Sue moved to Perth in 2011 after falling in love with the climate and the people, and she set about establishing her own business in her adopted city. She continued working in restaurants whilst building the business, initia

lly selling her chocolates at the Subiaco Farmers Market. Sue’s products rapidly gained popularity and she developed a strong following until finally she was able to open her own working studio and shop in Subiaco which was named as one of the top 8 chocolate shops in the world by British Airways High Life Magazine. Sue creates fresh handmade chocolates using the world’s finest covertures blended with local, seasonal, often organic produce. Unlike other chocolates, Sue’s creations contain no preservatives and are lower in sugar.

Although we do take a break from the shop our minds are always still thinking about chocolate… terrible I know! We had such a blast in FNQ but getting a tour from Jenny was an absolute highlight. She gave us so much time & information about the journey of their 17 years of farming cocoa in Australia and what a tough job they’ve had, it makes our job seem easy! There is so much involved in the cocoa process from planting seeds… plenty lost seedlings in floods & rains, cocoa flowers lost in wind, pods rotting on trees and that’s just the beginning. You then have the harvesting, fermentation, drying, roasting, cracking, winnowing, roasting, grinding and then finally making chocolate 😅 we were also lucky enough to try a variety called white cocoa… the flesh is quite sour tasting and the beans are white in colour (generally they are purple in colour… they turn brown after the fermentation & drying process) and it also takes a grinder to get through to the flesh! Their chocolate is outstanding… five main varieties to try with the 85% being our favourite… really smooth and you can really taste the flavour profile of the beans & it’s won a world silver award! You can only buy this chocolate direct from the farm so we highly recommend if you are ever in the Cairns region to make a trip out (about an hour’s drive), have a tour & try some Australian tree-to-bar chocolate. Well Perth that was huge… thank you to everyone who popped in to support us this week & apologies if anyone missed out. There will be one last chance on Saturday… we are closed tomorrow but making what we can for one last push on Saturday… open from 10am to 4pm.

A quick update… we are having our busiest Easter ever so thank you ☺️ however this does mean we are starting to see products sell out… we are working the hardest we can to keep on top but we apologise if you miss out.
We cannot take any more orders so just in store sales only.
Open today & tomorrow from 10am to 5pm then closed Good Friday & Saturday 10am to 4pm.

Just a little heads up on the week ahead…
This is our busiest week of the year & have worked really hard to make as much stock as possible but as always we will sell out of certain products as the days go on. The sooner you can get in the better or you still have a couple of days to pre-order online… this is the only way to guarantee you will get exactly what you want. Fresh truffles will come out daily and we will do our best to keep on top of products. Thanks to everyone who has supported us so far and looking forward to seeing the rest of you soon.
