Born in Melbourne. Sharing flavour since 2009 🤎

Melbourne’s coffee culture taught us to never settle for average.

For over 17 years, we’ve been fascinated with flavour. Roasting coffee that helps cafés thrive and keeps people coming back for a second cup.

Some things never change. Thanks Melbourne!☕❤️

🚨 MELBOURNE EVENT UPDATE 🚨

Unfortunately, Simon has been feeling unwell and won’t be able to travel to Melbourne today, so we’ve made the difficult decision to postpone the Melbourne World Brewers Cup Tasting Tour by 24 hours.

We know this is a last-minute change and understand it may be disappointing, but we’re really looking forward to bringing this tasting to Melbourne and making it a special evening with Simon.

📅 New date: Thursday, 13 August
⏰ 5–7pm

All existing tickets have been automatically updated to the new date, and everyone who purchased a ticket has been informed via email.

Thank you so much for your understanding and support ❤️

We’ll see you all on Thursday for an evening of incredible coffees, stories and everything Simon learned on the World Brewers Cup stage. ☕️

Dialling in is one of the biggest skills a barista can learn 💯

The goal is to make the best tasting coffee, consistently.

Every espresso recipe has three key parameters:
⚖️ Dose
⏱️ Time
☕ Yield

Once you’ve chosen your recipe, there’s only one variable you should be adjusting to hit it consistently:
⚙️ The grind size.

Grinding finer slows the shot down.
Grinding coarser speeds it up.

Everything else stays the same.

If you’re just getting started with espresso, understanding this one concept will make dialling in far less confusing and help you brew more consistent, balanced coffee.

Save this post if you’re just getting started in a career behind an espresso machine ☕

Sydney & Melbourne ‼️ The best lineup of coffees Simon has ever selected. 🌍☕

After finishing 2nd at the World Brewers Cup, Simon is opening up the coffees behind his World Championship journey for two exclusive cupping experiences.

This is your chance to taste the coffees that shaped his preparation, compare the different lots, and discover why certain coffees made it all the way to the world stage.

Throughout the session, Simon will share the thinking behind his selection process, what he learned competing on the world stage, and what separates an exceptional coffee from a truly competition-worthy one.

📍 Sydney — 10 August
📍 Melbourne — 12 August

Tickets start from $40 AUD for the guided cupping experience.

Want to take the experience home? You can also add tasting doses of Simon’s World Championship lineup:

• Panama Finca Nuguo Natural Geisha
• Panama Lost Origin Natural Geisha
• Colombia Finca La Negrita Anaerobic Natural Geisha
• Colombia CGLE Anaerobic Honey Geisha
• Panama Mount Totumas Washed Geisha
• Panama Longboard Natural Geisha
• Panama Mi Finquita Natural Geisha

Seats are limited—we can’t wait to share these incredible coffees with you. ✨

Introducing Ethiosar. 💥 A rare varietal created by crossing Sudan Rume and Sarchimor. One parent chosen for extraordinary flavour. The other for resilience, disease resistance and productivity 💪

The result? A variety that captures some of the elegance and complexity Sudan Rume is famous for, while being practical enough for farmers to grow successfully.

This lot comes from El Vergel Estate EL VERGEL ESTATE, produced by Shady & Elias Bayter, our longest-standing producing partners and a farm we’ve proudly worked alongside for years.

A rare varietal 🌱
A world-class producer 🧑‍🌾
A coffee we’re excited to share🙌

After placing second at the World Brewers Cup, Simon wanted to create an event that goes deeper than just tasting rare coffees.
This will be an interactive tasting built around the concept that shaped his World Brewers Cup routine: clarity.

You’ll taste the coffees from his World Championship preparation, alongside other exceptional coffees, and try to guess which ones made it to the world stage.

Simon will also share what he learned from competing at the world level, how he reverse-engineered the final cup profile, and how coffee selection, brewing, water and service all helped shape the final experience.

Tickets start at $40 AUD for the tasting only.
Upgrade your ticket by purchasing take-home does of Simon’s World Championship selection:

Happy Friday, everyone! ☀️

This week was a lot of fun, and we had a big part of our team together at the studio. Naturally, Sergii had to take the opportunity to see how good everyone was at recreating the sounds of some commonly used coffee tools. 😂

Who do you think did the best job?
A***n, Bjorn, or Anton? 😭 We think they absolutely nailed it! 🔥😂

Wishing you an amazing weekend filled with lots of fun—and, of course, plenty of delicious coffee. ☕️🤍
