Commonly known as Blue Flower Tea is a caffeine-free herbal tea, a beverage made from an infusion of the flower petals or even whole flower of the Clitoria Ternatea plant is also known as butterfly-pea, blue-pea, Aprajita, Cordofan pea, Blue Tea Flowers, or Asian pigeonwings.
Derived from a plant that is common to most Southeast Asia countries butterfly pea flower tea has been brewed for centuries but only recently been introduced to tea drinkers outside the indigenous area. Butterfly Pea Flower tea gains its distinctive tint from the deep blue colour of the petals that have made the plant a popular dye for centuries. One of the aspects of the tea is the fact that the liquid changes colour based on the pH level of the substance added to it, for instance, adding lemon juice to the tea will turn it purple, turning a deeper shade of purple the more lemon juice is added. Mixed with fuchsia Roselle Hibiscus leaves the tea will turn a bright red colour.

HOW TO MAKE:
To start, you’ll need to boil water. You need about 4-5 flowers per 250 ml of tea. Roughly a teaspoon of flowers, just don’t go overboard with the flowers since they really impart a deep blue colour. For perfect butterfly pea flower tea, you will pour the water directly onto the dried flowers. The best temperature of the water to be 85 degrees Celsius. This gives you a great herbal-earthy flavour and won’t taste burnt. You should only steep the butterfly pea flower tea for 3-4 minutes. By adding in lemon or lemon juice will really give the tea a real zing for taste and can be drunk cold as well.
