Dinner is sorted! 🧀🍗 Elevate your quesadilla game with crisp, farm-fresh ingredients from Harris Farm Markets.



Recipe 👇 (serves 4)
Chicken
500g chicken thighs, cut into strips
1 brown onion, sliced
1 green capsicum, sliced
1 tbsp Tajín
1 tbsp Mexican spice mix
3 tbsp tamarind paste
¼ cup extra virgin olive oil
Burnt capsicum salsa
1 red capsicum
½ Spanish onion
350g heirloom tomatoes
¼ bunch coriander
1 lime, juiced
To assemble
15 corn tortillas
200g mixed cheese, grated
1 avocado, thinly sliced
Method
1. Preheat the oven to 240°C (220°C fan-forced).
2. Place the chicken, brown onion, green capsicum, Tajín, Mexican spice mix, tamarind paste and olive oil in a large bowl. Season well with salt and freshly cracked black pepper and toss to coat.
3. Spread the chicken mixture on a lined baking tray in a single layer. Roast for 30 minutes, until cooked through and lightly charred around the edges.
4. Char the red capsicum directly over a gas flame, turning regularly, until blackened all over.
5. Transfer to a bowl, cover and rest for 10 minutes. Peel away the charred skin, discard the seeds and roughly chop the flesh.
6. Over the same flame, char the Spanish onion, cut-side down, until dark and well-coloured. Char the tomatoes for 1 minute on each side until blistered.
7. Transfer the charred capsicum, Spanish onion and tomatoes to a blender. Add the lime juice and coriander and blend until smooth. Season to taste.
8. Heat a large frying pan or grill pan over high heat. Warm a tortilla, sprinkle one half with cheese and top with some chicken filling. Fold over and cook for 2–3 minutes, until golden and crisp and the cheese has melted.
9. Cook the remaining quesadillas in the same way. Open each one, add a few slices of avocado and spoon over some capsicum salsa. Serve immediately.
