BELACHAN. THE TEST BATCH THAT GOT COMPLETELY OUT OF HAND

We made our Belachan Condiment once.

Just a little test batch.

Well… that was the end of that. 😂

It’s now become an absolute Butlers staple AND a sell-out almost every week. We genuinely cannot seem to make enough of it.

Our Belachan starts with onions, garlic, ginger, chillies… LOTS of chillies 🌶️, shrimp paste and brown sugar, all slowly simmered in a clean oil for two days.

The result?

Deeply savoury.
Soft and rich.
A little sweet.
A beautiful chilli warmth.
And ridiculously delicious.

It’s one of those jars that somehow ends up on EVERYTHING.

🥟 Spoon it over dumplings
🍳 Add it to eggs
🍚 Stir through rice or noodles
🥩 Serve with grilled meats
🥦 Spoon over roasted vegetables
🥪 Add to toasties and sandwiches
🥢 Or just stand at the fridge eating it from the jar. We’re not judging.

We’re back at the chopping boards, prepping mountains of fresh ingredients ready for the next batches of our traditional Fire C***r

Fresh onion, garlic, ginger, turmeric, horseradish, citrus, chillies, herbs and spices are packed into raw apple c***r vinegar and left to slow-infuse for 8–10 weeks, before being filtered and balanced with local raw honey.

No shortcuts. No instant extracts. Just a proper, old-school herbal vinegar infusion that takes time to become the fiery little bottle we love.

🌿 Traditionally enjoyed as a daily digestive tonic to support gut and digestive wellbeing, and particularly popular through the cooler months when you want something warming, punchy and invigorating.

Take 5–10ml daily, add it to warm water, splash it into salad dressings or marinades, or simply knock it back if you like your mornings with a bit of 🔥.

Fire C***r Chilli Crunch 🌶️🔥

Crunchy, spicy, aromatic and seriously more-ish.

Our Fire C***r Chilli Crunch is loaded with fried and dried red onion, garlic and chillies, tossed with our Fire C***r Spice and suspended in a deeply aromatic grapeseed oil infused with star anise, black pepper, clove and cinnamon.

The result is layers of crunch, savoury heat and warm spice, with that unmistakable Fire C***r kick running through every spoonful.

Spoon it over eggs, noodles, dumplings, rice, stir-fries, roast vegetables, avocado, pizza or sourdough. Stir it through mayo, yoghurt or hummus, or simply put the jar on the table and accept that it probably won’t last long.

A glorious crunchy nut mix tossed through our Fire C***r Spice, then sprinkled with dehydrated peanut butter powder.
