Heads up brewers!

We have been seeing quite a few steel gas cylinders coming in lately for refills with their residual pressure valve (RPV) missing. The residual pressure valve stops the steel cylinder from being drained completely by only a small amount of gas. It gives your cylinder its ten (10) year life. If a cylinder comes in with it's RPV missing and is over five years old we are legally required to refuse to fill it. The owner then has to pay for recertification of the cylinder before it can be refilled again. So always check it is put back in at the filling station when you get your cylinders filled.

It's that time of the year for a nice hearty stout. Our stout may not be an Imperial Stout as produced in England nearly 350 years ago but it is an English stout style. In fact we think its probably a stout of similar style to Cooper's Best Extra Stout. This style recipe makes 23lt of dark stout that's not for the faint hearted. It has 6.2% ABV, IBU of 46.7, and a dark brown to black colour. We use 1.7kg Coopers Original Stout as the base then add liquid 1.5kg Morgan's Dark Roasted Malt, 750g Dextrose, and 250g Maltodextrin for enhanced head and dryness.Then we ferment it with a15g Morgan's English Ale yeast. Ferment at 22-24 Degrees.

Home brew beer kits or beer wort do not contain alcohol until fermented. Due to the number of variables involved it is very difficult to make a clone of commercial beer but we can make a home brew beer of similar style.

It was decided to add cider style kits for the cider brewers to the style recipes we are publishing. This cider style recipe creates a Graf Cider using Black Rock Classic Cider, barley malt, and hops. However instead of using sparged grain malt we have made it much easier and used liquid barley malt. It is made with 1.7kg Black Rock Classic Cider, 1.5kg Extra Pale Morgan's Master Malt and then after 1020 specific gravity has been reached dry hopped with 50g of Magnum to enhance the aroma. We suggest using a yeast such as SafAle US-05 ale yeast.

Please note home brew goods do not contain alcohol until fermented. Due to the varying levels of brewer skills and different equipment used by brewers we can not guarantee style recipes to create the same outcome for all brewers.

Time for another beer style recipe. Some of the others have been quite popular. Lets keep it nice and simple for our take on James Squire Swindler. We use 1.5kg Morgan's Pale Master Malt, 500g Dextrose, 500g Light Dry Malt, 12g Galaxy boiled for 30 mins and at the end of the boil immediately add 12g of El Dorado and let stand for 20minutes before adding to the wort. Suggested Yeast Mangrove Jacks Bavarian Lager yeast. Calculated specifications : ABV- 4.2%; IBU-22.1, EBC- 6.1 (golden colour). Hop notes: melon, passion fruit, pear. Total wort volume 23litres.

This kit does not contain alcohol. Alcohol is produced during fermentation of kit contents. Style packs can not make clones of commercial product but will create a beer of similar style to the identified product. We can not guarantee outcomes as the skills of brewers varies as does the technical equipment which they may use.

This is Mangrove Jack's style pack recipe for Great Northern Original: one of Australia's leading commercial beer. Mangrove Jack's style pack recipe has had the thumbs up from customers. It uses 1.7kg Mangrove Jack's Australian Series Blonde Dry malt tin. It's one of our favourites too. Then adds 1.5kg Pure Light liquid malt, steeped Cluster Finishing Hops, and ferments cold with a Bohemian Lager M84 yeast. You need a brewing fridge for all lager recipes. Finishing ABV 4.2%. It goes down a treat served cold in a frosty glass. Recipe makes 23lt so its great value too.

Style pack recipes do not make clones of commercial beer. There are too many unknown variables involved to ever make an exact clone beer. But we can produce a beer of similar style with similar hop notes, aromas, bitterness levels, and ABV percentage.

NB: Home brew beer wort does not contain alcohol until fermented. We suggest using glucose carbonation drops or light dry malt when bottling as they produce minimal sediment and do not distort the brewed beer taste as may occur with sucrose sweetener.

I thought I would pass on our take of a Crankshaft style IPA. It is a style kit. Our kit makes an IPA using Morgan's Canadian Series India Pale Ale and 1.5kg of liquid unhopped Caramalt. It has a base IBU of 23.0 which is a fraction low. So we add steeped, Cenetennial, Simcoe and Sticklebract. This offers a pine, citrus and floral note and boosts the final bitterness level to close to 35.5 IBU. With the blend of malts and the addition of Light Munich grain the wort colour EBC is 14.9 or amber to orange colour. This beer will have a full malt flavour. We use a Verdant IPA yeast. Its an ale yeast but don't let it get too hot. Its ABV is 5.7% so we add a beer nutrient instead of using a double yeast. Recommended volume is 20 litres which is great for kegging.

NB: Style kits can not make clones of commericial products. They can make a beer of similar style which you can shape even further to make your own favourite beer.

If you follow the Australian beer reviews then you may be aware of the Great Australasian Beer Spectapular, or GABS as it is commonly known. It's a beer and food festival which celebrates beer and rates them. It is not just for craft beer though. It is run in Melbourne and Sydney and during it almost 23,000 people attended. Here is something Cooper's lovers would agree with. Coopers Original Pale Ale came 2nd in the ratings out of over 100 different beer entries.

It's relatively easy to make a very similar style home brew beer. So here's what you need: one 1.7kg can of Coopers International Australian Pale Ale, 1.0kg of Brew Booster, and one sachet of Lallemand Nottingham ale yeast, and a bag of glucose drops.

We have nearly 80 extract home brew beer recipes we are going post on facebook over the coming weeks. Keep watch for them. Not all will cost the same to make because of different ingredients so their prices will vary in store.
