20-minute pasta night, sorted. 🍝🌿 This Pesto Chicken Linguini recipe by Woolworths is fresh, creamy and easy to throw together when the evening is already feeling a little chaotic. Chicken, basil pesto, baby spinach and parmesan make this one a proper weeknight winner.

🛒 INGREDIENTS

🫒 1 tbsp extra virgin olive oil
🍗 500g Woolworths RSPCA Approved chicken breast fillets
🍝 375g La Gina linguini
🌿 120g baby spinach leaves
🌱 190g La Gina basil pesto
🧀 40g parmesan, grated

👩‍🍳 METHOD

1️⃣ Brown the chicken in olive oil, then bake at 200°C/180°C fan-forced for 12 minutes or until cooked through. Slice.
2️⃣ Cook the linguini until al dente, saving ⅓ cup of pasta water before draining.
3️⃣ Toss the pasta with the reserved water, most of the pesto and the spinach until wilted.
4️⃣ Serve with sliced chicken, the remaining pesto, parmesan and a good crack of black pepper. 🤌

Easy, comforting and on the table in around 20 minutes. Save this one for a busy night! 📌

🥃 NEGRONI
30mL Cinzano Rosso Vermouth
30mL Campari
30mL Tanqueray London Dry Gin
🍊 Stir with ice, strain over fresh ice & garnish with orange rind.

🍇 GREY GOOSE GRAPE
60mL Grey Goose Vodka
150mL lemonade
10mL sugar syrup
Squeeze of fresh lime
Fresh green grapes
🍇 Muddle grapes & strain the juice into a glass. Add vodka, sugar syrup & lime, then top with ice and lemonade. Garnish with grapes.

🍋 TOMMY’S MARGARITA
50mL tequila
25mL lime juice
15mL agave syrup
🍋 Shake with ice, strain over fresh ice & garnish with a lime wheel.

🍊 APEROL SPRITZ
60mL Aperol
90mL Prosecco
30mL soda water
🍊 Pour Aperol and Prosecco over ice, top with soda & garnish with an orange slice.
