New at SIP 🍷 Meet Winmark

We’re now stocking Winmark w**es at SIP Wollombi Village, and we’re kicking things off with two beautiful Chardonnays.

2023 Single Vineyard Reserve Chardonnay
Inviting and generous, with aromas of roasted nuts, melon and fig. Layers of white stone fruit and citrus follow, wrapped in subtle French oak and a velvety texture from extended lees contact. Elegant, balanced, and long on the finish.

Rusty’s Run 2024 Chardonnay
A tribute to the estate’s much-loved dog Rusty. Bright, easy-drinking and fermented in stainless steel to let the fruit shine - think green apple and ripe pear, fresh and cleansing on the close. Drink now or cellar for up to 5 years.

Pour yourself a glass with friends and a good grazing board, smoked salmon, brie, oysters, prawns - you get the idea.

Sculpture Festival season is here 🍷🎨

From 12–27 September we're open every single day, pouring tastings at the SIP counter while beautiful sculptures are installed throughout Grays Inn and out in our formal garden.

No booking needed - just walk in for a tasting at the counter, then take yourself on a self-guided wander to spot the artworks around the building and garden.

Introducing The Wollombi Gin

Wollombi has always been a meeting place ~ its name reflecting the convergence of waterways that shaped this valley for thousands of years, and the many cultures who’ve gathered here since.

That sense of place inspired The Wollombi Gin, a small-batch collaboration between SIP Wollombi Village and Phoenix Distilling Co.

Crafted with local native botanicals, wattle blossom, roasted wattleseed and native pepperberry, layered over a classic dry gin base, it’s a spirit that’s elegant, balanced and distinctly Australian.

Released to celebrate the Wollombi Valley Sculpture Festival (on now until 27 September),
