🍫 WHY FNQ CHOCOLATE IS SOMETHING VERY SPECIAL

What a fabulous write-up in the Cairns Post celebrating Far North Queensland cacao and chocolate — and congratulations to Chris and the Charley’s Chocolate team for helping shine a light on this incredible little industry growing right here in our backyard.

What fascinated me most was the research behind the story.

University of Queensland researchers have been studying cacao grown at Fishery Falls, Mount Edna and Shannonvale, and what they are discovering gives us another reason to be incredibly proud of our region.

It isn’t only about the cacao tree itself.

The natural environment and fermentation process play an enormous role in developing the flavour and quality of the cacao. The naturally occurring microorganisms surrounding the beans help drive fermentation and contribute to the individual flavour characteristics that eventually come through in the chocolate.

Researchers identified around 90 different volatile compounds, with our cacao capable of producing everything from beautiful traditional chocolate and roasted characteristics through to buttery and tropical notes.

That is extraordinary.

And perhaps my favourite part of the research is the recognition that Australian chocolate doesn’t need to compete with mass-produced chocolate.

Our opportunity is premium chocolate — distinctive chocolate with provenance, place and a story behind it.

That sums up everything I love about working with our North Queensland growers and makers.

We have this extraordinary agricultural region around us, and the more I learn about what our farmers grow and how they turn it into beautiful finished products, the prouder I become.

With Charley’s, that journey is quite literally TREE TO BAR.

Growing the cacao.
Harvesting the pods.
Fermenting the beans.
Developing those incredible flavours.
Making the chocolate.

And all here in Far North Queensland.

That connection between farmer, environment, maker and finished product is something we should be shouting from the rooftops.

We are enormously proud at Winter & Mann to have so much North Queensland chocolate sitting on our shelves and, even more importantly, to know the people and stories behind it.

A LITTLE TASTE OF NORTH QUEENSLAND 🍯🥭🍫

Peak season is in full swing in beautiful Yungaburra, and we’re busy keeping the Winter & Mann pantry filled with the flavours and local favourites you love.

🍯 Our beautiful local Tablelands honey is back — one of our most-loved products and something visitors regularly take home as a genuine taste of our region.

🥭 Fruitessence freeze-dried mango, made right here in Yungaburra from locally grown mangoes, has also been freshly topped up. Pure tropical goodness with that incredible concentrated mango flavour.

🍫 And for the chocolate lovers, our North Queensland artisan chocolate is rather hard to resist. Beautiful rich dark chocolate paired with ginger or coconut — simple, sophisticated flavours that celebrate tropical ingredients and make a gorgeous little indulgence or gift.

🍪 Our baskets are also full again with Andibel’s handmade Italian-style biscuits — lemon almond, crunchy wine biscuits and fig & nut. Beautiful with coffee or tea, perfect for a hamper… or simply something special for your own pantry.

YOU ASKED FOR GOLD… AND WE LISTENED ✨

We are incredibly excited to introduce a new Australian jewellery designer to Winter & Mann.

Welcome, Alana Douvros Jewellery.

When we curate Winter & Mann, it is never simply about finding more. It is about finding something that adds another layer to what we already love — another maker, another story and another reason to discover The Best of North Queensland & Beyond.

We are incredibly proud of the relationships we have built with our existing jewellery designers, including the beautiful work of Hirani and Liz Galley. Their distinctive sterling silver, pearls and individual designs remain an important part of our jewellery story.

But we have also been listening.

Again and again, customers have asked us:

“Do you have anything in gold?”

So rather than simply finding gold jewellery, we went searching for an Australian designer whose work, values and craftsmanship would sit beautifully alongside the makers we already represent.

And we found Alana Douvros.

Alana is an Australian jewellery designer currently living and working in Sydney, Australia, where she designs and handcrafts her jewellery.

She studied her craft at California College of the Arts, completing a BFA in Ceramics alongside a focus on Jewellery Metal Arts.

Her inspiration begins with the earth itself — raw gemstones, natural pearls, seashells, coral, fossils and beautiful organic forms.

Much of Alana’s lapidary work — the art of cutting and polishing stone — is undertaken by Alana herself, maintaining that wonderful connection between the artist and the material.

Her jewellery is handcrafted using natural gemstones and recycled precious metals, with a philosophy grounded in thoughtful production, individuality, sustainability and an appreciation for materials in their natural state.

For Winter & Mann, we have deliberately curated Alana’s beautiful 14k gold-filled collection, introducing the warmth of gold our customers have been asking for while complementing the wonderful jewellery already represented in store.

Our first collection includes:

✨ Natural Mabe pearl earrings, with the pearls remaining in situ in mother-of-pearl
✨ Real limpet shell earrings
✨ Sculptural mushroom coral earrings
✨ Raw aquamarine studs
✨ Natural muscovite studs
✨ Raw turquoise necklaces

Because these are natural materials, their variations aren’t imperfections — they are part of their story. Each stone, pearl and shell carries its own shape, markings, texture and character.

And that is exactly what drew us to Alana’s work.

For us, this is what Winter & Mann — The Best of North Queensland & Beyond is all about.

We celebrate the extraordinary makers of our own region while continuing to search beyond North Queensland for Australian designers and artisans whose work complements them and brings something genuinely special to our little store in Yungaburra.

Together, they create a beautifully considered collection of Australian jewellery — and now, at last, a touch of gold. ✨

A little sneak peek of something beautiful arriving later this week… 🦋

We are delighted to be welcoming another beautiful collection from Jillian Zamora of ZaMama Pottery to Winter & Mann.

Jillian’s work has such a distinctive, earthy quality — beautifully handcrafted, organic and tactile, with every piece carrying its own individual character. Inspired by earth, water, air and fire, her ceramics feel grounded and wonderfully connected to the natural environment of Far North Queensland.

What we especially love is that these are pieces made to be used, loved and enjoyed — a favourite cup for your morning tea or coffee, a beautiful bowl for something nourishing, or a special piece that simply brings a little beauty to an everyday moment.

These photographs are just a sneak peek of Jillian’s newest collection, arriving a little later this week. We feel very fortunate to showcase the work of such a talented local ceramic artist and can’t wait to share it with you.

What a beautiful Saturday we’ve had at Winter & Mann.

One of the things we love most is watching our customers come into the store, try something on and discover a garment that simply fits, feels beautiful and works for real life.

Our shelves are filled with carefully selected small-batch gourmet food, including locally grown tea and coffee, artisan chocolate, condiments, freeze-dried tropical fruits, macadamias and so much more.

Alongside them you’ll discover the work of local artists, authors, makers and growers, Australian fashion and beautiful pieces chosen for their quality, craftsmanship and story.

When we cannot source something exceptional locally, we look further afield — searching across Australia for what we call the Best of North Queensland & Beyond.

It is a very simple philosophy: local first, Australian always where we can, and quality above all.

This week we’ve continued to replenish many of your favourites.

Our beautiful crocheted cotton shower puffs and cotton face washers are back. After years of using plastic shower puffs myself, becoming more aware of microplastics made these natural cotton alternatives particularly appealing. Paired with one of our locally made soaps, they make a beautiful, thoughtful gift — or a lovely little piece of everyday care for yourself.

We’ve also welcomed another delivery of our much-loved Annabelle Biscuits in Lemon, Orange and Plain Almond.

And it was wonderful to see talented local author Renee Hayes today. Renee has replenished all four of her books and personally signed every copy for our customers. Thank you, Renee — we are incredibly proud to have your work represented in our store.

There’s plenty happening in fashion too, with new-season collections arriving throughout the weekend.

To make way, we now have two special racks at the back of the store featuring selected end-of-season pieces and some of our top-selling lines at 20% to 60% off.

There are some wonderful finds amongst them — and we all enjoy a sneaky bargain!

But ultimately, what we want you to remember about Winter & Mann isn’t simply what we sell.

It is how we want you to feel when you visit.

☀️ What an amazingly beautiful, sunny day in gorgeous Yungaburra on the Atherton Tablelands! 🌿

It has been a HUGE day of deliveries at Winter & Mann, with the shop absolutely bursting with beautiful products from some of our wonderful growers, makers and producers. We’ve spent the day unpacking, restocking and making everything look beautiful — and there is so much to discover!

🌿 Sunset Ridge Native Fruits arrived with a fresh batch of their beautiful handmade favourites, including fresh marshmallows, Davidson Plum Jam, mixed Davidson Plum paste packs and plenty more native fruit goodness.

🍯 A very warm welcome back to Gooburrum Grove!
It was so special to have them drive all the way from Bundaberg to personally deliver their products to us today. Their granola was actually one of the very first products we stocked when Winter & Mann began, so we are delighted to have it back on our shelves!

We received their granola in both 500g and 1kg sizes, delicious organic coconut chips, and an incredible selection of infused honeys including Lavender, Rose, Black Garlic and Lemon Myrtle. We also have their much-loved Chilli Relish and Green Chilli Sauce back in store.

We can’t wait to continue bringing in more of the Gooburrum Grove favourites we have loved stocking over the years. 💛

🌱 We also received a HUGE selection from Bakirindi Bush Foods, including Macadamia Satay, Davidson Plum Chilli Sauce, Mango & Chilli Sauce, Sweet Chilli & Lemon Myrtle Sauce, Paw Paw & Ginger Jam, Finger Lime Pickle, Tomato & Apple Kasundi and so much more.

🍍 And another beautiful local delivery from Gabby & Michael at Fruit Essence, grown and produced right here in Yungaburra! We have restocked their incredible freeze-dried whole raspberries, freeze-dried pineapple, native finger lime powder, native powders, lemon aspen powder and lots more.

🦈🐢 We’ve also had more gorgeous McMinis swaddles arrive — beautifully soft 70% bamboo and 30% cotton, including the Turtle design and the much-loved big blue design featuring some of our favourite marine life, including sharks and turtles.

It was wonderful seeing Yungaburra so alive today — visitors exploring our beautiful village, locals out and about, and families and friends enjoying lunch, morning tea and this glorious Tablelands weather. ☀️

There is so much happening at Winter & Mann at the moment, and it really is one of the most beautiful times of year to visit Yungaburra.

🌿 WHAT A WEEK OF BEAUTIFUL NEW ARRIVALS AT WINTER & MANN! 🌿

Our little store in Yungaburra is absolutely bursting with new arrivals, and today was one of those wonderful days of unpacking, steaming, styling, replenishing and discovering just how beautiful everything looks together.

And we have to start with Goondiwindi Cotton. 🤎🇦🇺

Our latest delivery has arrived, with so many beautiful pieces from the new Spring/Summer collection, and there is even more on its way later this week.

🌴 NATURAL FIBRES. SUN-WASHED TONES. DESERT PALM.

The new Desert Palm collection is simply stunning.

Inspired by the warm golden light, sunbaked landscapes, rich earth tones and wide-open country of western Queensland, this collection brings together Chocolate, Desert Palm, Dark Navy, White, Azure Blue, Electric Pink, Whipped Cream, Oatmeal, Sage and beautiful denim tones.

The Desert Linen Cotton Blouse and matching Easy Linen Cotton Pant are absolutely gorgeous worn together. Crafted from breathable cotton and linen, they create such an elegant summer outfit, but both pieces are equally beautiful worn separately.

Then there is the Chocolate Stripe collection. 🤎

The Ivy Maxi Dress is one of those dresses you simply put on and feel wonderful in. Crafted from breathable linen and cotton, it can be worn relaxed and loose or cinched at the waist with its self-fabric belt. It has 3/4 cuffed sleeves, side pockets, beautiful gathering through the front yoke and an easy maxi length.

Many of you may recognise this gorgeous dress from Friday’s Cairns Business Women’s Club luncheon, where several of our beautiful ladies wore pieces from Goondiwindi Cotton. We’ll include a photograph because there is nothing better than seeing these clothes being worn and enjoyed by real women.

And the Sky Frill Neck Cotton Shirt in Chocolate Stripe is another standout — 100% cotton poplin, chocolate and white stripe, with the prettiest contrast pink detailing inside the placket and cuffs. It is those thoughtful little details that make these garments so special.

Across the collection we have a wonderful selection of sizes from 8 through to 20, depending on the individual style.

We’ve unpacked gorgeous Sorbet 100% Cotton Knits in colours including Azure Blue, Electric Pink, White and Dark Navy, along with dresses, shirts, linen-cotton separates, denim and beautiful layering pieces.

And, of course, our much-loved 5 Pocket Jeans are back in a fabulous selection of colours including Dark Navy, Dark Indigo, Denim Blue, Chocolate and To***co.

These are a constant favourite — soft stretch cotton denim, comfortable, durable and designed for everyday wear.

🧶 AND FOR OUR BEAUTIFULLY COOL TABLELANDS EVENINGS…

We certainly haven’t forgotten that even as Spring/Summer arrives, our Atherton Tablelands evenings can still be deliciously cool.

We have beautiful Merino wool and cotton jumpers and cardigans in store, including the gorgeous Jillaroo ½ Zip Jumper in Whipped Cream, crafted from 55% Extrafine Merino Wool and 45% Cotton, with its relaxed rib knit and statement gold zip.

Our Brook Merino Cotton Cardigans are another beautiful natural-fibre layer — soft, warm, breathable and perfect to throw over one of the new dresses when the temperature drops.

Our bookshelves have had a wonderful replenishment too.

We have received more signed copies of Cloud Land by Dr Penny van Oosterzee, an award-winning author, environmental scientist and Adjunct Professor at James Cook University.

Cloud Land tells the remarkable story of Australia’s tropical rainforest people and country and has such a special connection to our own Atherton Tablelands and Wet Tropics. Penny’s work has been recognised with two Eureka Science Awards and several Whitley Awards, and Cloud Land was shortlisted for the 2023 Courier-Mail People’s Choice Queensland Book of the Year.

And our lovely local author Renee Hayes has also dropped in a full replenishment of all four of her books — and they are all SIGNED. ✍️📚

We absolutely love our local authors.

There is something incredibly special about buying a book in the region where its stories and inspiration belong — and taking home a signed copy from the person who wrote it.

🦆 SHANNA TREES HAS ARRIVED TOO!

We’ve also received another beautiful delivery of Shanna Trees T-shirts, including the gorgeous new chocolate-brown Platypus.

These wonderful North Queensland designs continue to be favourites with locals and visitors alike and make such a fabulous wearable reminder of our region.

A big fresh batch of Annabelle’s beautiful Sicilian biscuits has arrived!
