One of my all-time favorite glasses, huge thanks to Gaetan at 3F for making it happen. Gueuze et Kriek — Van Onckelen blended in Molenbeek at Brasserie La Cour Royale (Rue Quatre-Vents 15). Active until 1957–1960, Van Onckelen produced Faro, Gueuze, and Kriek ( via ).

If you look at the back of a Boon bottle, you’ll see the recommendation to store it upright rather than on its side. It is a practical approach for one of the largest producers in Lambiekland, aimed at making cellaring and serving easier for most drinkers. Boon also does not use baskets. If you pour the bottle out in one steady, continuous motion, there is no need for a basket to manage sediment. Boons philosophy has always been to keep things accessible, not to add steps that could complicate the enjoyment for the average drinker.

That said, there is a small bit of basket history here. In the 1980s, Frank had a limited run of branded baskets made. They were cheaply produced and only a small number ever made it into circulation. I have talked with Frank many times about basket culture, and while he chooses not to use them, I understand and respect the reasoning. One of my most prized baskets, this piece was acquired from a high-end secondary shop in Brussels 🇧🇪 It’s the most I’ve ever spent on a basket, but the craftsmanship more than justifies it. The intricacy of the weave is exquisite—meticulous and deliberate. I’m slightly uncertain about the material; it appears to be either finely split willow, cane, or perhaps a hybrid of both. The woven wicker is coated with black paint on the exterior, though the interior remains untouched, revealing the natural material beneath. The basket’s framework closely resembles several other older examples I’ve sourced from Brussels. A small loop hole at the crown suggests considerable age. Its counterpart on the opposite side is missing, though the mark of its former presence is still visible. These loop holes would have once held a ribbon used to secure a bottle—an old technique rarely seen today. This design detail is illustrated in Raf Meerts’ 1864 pouring basket for Burgundy wine, further reinforcing the historical significance of the piece. Oude Geuze Vieille 2014 drinking lovely 👌🏻😋

Gueuze was on the decline after the first World War… “There was one silver lining for gueuze during these difficult years: the financial crisis made French champagne less accessible for some consumers. Creative Brussels publicans therefore offered a blend of equal parts champagne and gueuze. In the 1920s, it was called a . It was - and still is - a particularly successful combination. I was fortunate enough on this past trip to examine a very old lambic basket that has remained in the Cantillon—van Roy family for quite some time. Jean-Pierre van Roy shared with me a basket that was passed down from Marcel Cantillon when he took over the brewery in 1969. Marcel Cantillon was the son of Paul Cantillon, and father of Claude who married Jean-Pierre. Marcel began working with his brother Robert at the brewery in 1937 under their father’s guidance. The basket is constructed of buff willow and is most likely upwards of 100+ years old. It was a true treat and honor to see this basket!
