Dimitri DaskalidĂšs, Deliska traditions founder in 1996, represents the 8th generation of pastry chefâs
dynasty and master chocolatiers.
The familyâs roots can be traced from 1760 in Constantinople then the multi-cultural capital of the Ottoman Empire.
During the 19th century, four generations will affirm the legendary recognition for the mouthwatering
oriental pastries consumed at the Sultan Court (known as ââLa Porteââ). These pastry chefs were renowned for their subtle creations and beautiful compositions of candied fruits, glazed chestnuts, or even delicious soft nougats. These soft nougats were known since antiquity.
In parallel by 1844, another branch of the family, the Fritz, became the forerunners of a new gourmet culture throughout itinerant fairs in Belgium, Holland and northern France They will popularize the famous Belgian fries, waffles served in sumptuous âCarrousel salonsâ.. , Around 1885, they will be added to the menus the candied fruits and bites from their Ottoman cousins. for the first time, they will be soaked in chocolate! grand-uncle, the well-known, pastry chef and entrepreneur Léonidas KestekidÚs.
In 1933is the birth of the fabulous Manon Café. A White chocolate shell filled with a buttercream flavored coffee. This Manon was invented by a trio, his grandfather Prodromos, his uncle, Jean Daskalides andhis great uncle Basile KestekidÚs, founders of the chocolatiÚres brands DaskalidÚs and Léonidas.
