🌿 Thyme: Harvesting, Preserving & Creating with Nature’s First Aid Herb
Thyme (Thymus vulgaris) may be a tiny herb, but it has earned a permanent place in both my kitchen and home apothecary. Fragrant and incredibly versatile, thyme has a long history of culinary and traditional herbal use—especially during cold and cough season.
And the wonderful thing about thyme? You don’t need a huge garden. It grows beautifully in a pot and can even be kept on a sunny windowsill through winter. 🌿
🌿 Harvest
Snip healthy sprigs throughout the growing season, ideally on a dry morning after the dew has disappeared. Cut above woody growth so the plant can continue producing.
🌾 How to Preserve
Drying — Tie small bundles and hang somewhere warm, dry, and well ventilated. Once completely crisp, strip the leaves and store in an airtight jar.
Freezing — Freeze chopped thyme in ice cube trays with water or olive oil, then transfer the frozen cubes into a freezer bag for easy cooking.
Tincture — Fresh or dried thyme can be extracted in alcohol for a concentrated herbal preparation.
Infused Honey — Dried thyme can be infused into honey for a beautiful preparation to keep in the winter apothecary.
🌿 Traditional Herbal Uses
🫁 Coughs & Respiratory Support — Thyme has a long history of use for coughs and respiratory complaints. Thyme preparations are traditionally used to help loosen mucus and support productive coughs.
🫖 Digestive Support — Traditionally enjoyed for occasional gas, bloating, and digestive discomfort.
🌱 Throat Support — Warm thyme tea with honey can be a wonderfully soothing preparation for an irritated throat.

Here in Alberta, thyme doesn’t reliably behave like a perennial in every garden, so I love growing it in pots, harvesting generously before the deep cold arrives, and preserving enough to carry me through winter. You can also bring a pot indoors and keep fresh thyme growing on a bright windowsill. 🌿
There is something so satisfying about reaching for a jar of thyme you grew and preserved yourself when winter has settled over the land.
