🌸 Have You Ever Tried Peony Jelly? 🌸
Peony blossoms aren't just beautiful—they can also be transformed into a delicate, jewel-colored jelly with a light floral flavor that's perfect on toast, biscuits, scones, or even paired with cheese.
Our first batch turned out a gorgeous ruby red, and it tastes just as beautiful as it looks! If you have fragrant, pesticide-free peonies blooming in your garden, this is a wonderful way to enjoy them long after the flowers have faded.
🌺 Peony Jelly Recipe
Ingredients
4 cups fresh, fragrant peony petals (white bases removed)
4 cups boiling water
2 tbsp lemon juice
1 package (57 g) powdered fruit pectin
4 cups granulated sugar
Directions
Gently rinse the peony petals.
Place petals in a large bowl and pour the boiling water over them.
Stir in the lemon juice. The color will begin changing to a beautiful pink or red.
Cover and let steep for 12–24 hours.
Strain through cheesecloth or a fine mesh sieve. You should have about 3½–4 cups of floral tea.
Pour the tea into a large saucepan and whisk in the powdered pectin.
Bring to a full rolling boil.
Add the sugar all at once and stir until dissolved.
Return to a full rolling boil and boil for exactly 1 minute, stirring constantly.
Remove from the heat and skim off any foam.
Ladle into sterilized jars, leaving ¼-inch headspace.
Process in a boiling water bath for 10 minutes (adjust for altitude if necessary).
✨ Makes: About 5 250 mL jars
Store sealed jars in a cool, dark place for up to 12 months. Once opened, refrigerate and enjoy within 3–4 weeks.
