FALL BARAKO LATTE
— Brew Barako strong (double-shot style)
— Steam or warm your milk of choice
— Add a pinch of cinnamon and a small spoon of brown sugar
— Pour milk over coffee, stir, dust with more cinnamon

Did you know Barako used to be the coffee of choice across the Philippines, long before imported Arabica took over?

Batangas and Cavite were once major coffee-growing regions in Southeast Asia in the 1800s. Barako was what your lolo drank before work, what got poured at wakes and fiestas, what every roadside karinderya served hot and strong.

Today it’s a lot harder to find, even in the Philippines. Part of our mission at Tala is making sure this coffee, and the story behind it, doesn’t disappear. 🇵🇭

MOKA POT BARAKO
— Fill the base with water to the valve
— Fill the basket with Barako, medium-fine grind, level (don’t pack it)
— Screw on top, low-medium heat
— Pull off heat as soon as it starts gurgling

Up close: the tree behind your Barako.

Liberica-Excelsa trees are massive, sometimes taller than a two-story house, with leaves and cherries much larger than Arabica or Robusta. In Lipa, Batangas, many of these trees have been part of the landscape for
generations, passed down within families of the cooperative.

Harvesting means climbing and reaching for cherries on trees that dwarf the farmers tending them. It’s slower work, and it shows in the care that ends up in your cup.
