Filtering✨
After the wine is finished degassing and sits for 3 weeks. It then gets filtered! Filtering is when we remove all of the grouts at that sink to the bottom. Grouts are small pieces of grape skins and dead yeast; they sink when we degass and get removed when we filter. After filtering you are left with beautifully clear and smooth wine.

Degassing✨
Looks so magical watching the CO2 escape from the wines. During fermentation yeast produces a lot of CO2, which creates acidity. We need to remove the acidity from the wine to create the smooth, stable taste.
