This year I plan to experiment with some "Single Region", and "Single Origin" Chocolate ...
I will be using only very fine ingredients.
I will be working in small batches
The first tastes will be coming out near the end of the month.
I'll keep you posted...

P.s. the sugar cane is coming along...if I get 1/4 cup of syrup I will consider the experiment a success.
