Let's talk chocolate!

There are two ways you can melt chocolate properly. If you are going to work a lot with chocolate, it is good to invest in a chocolate melting pot (thanks mom!). These can come in different sizes but are great for keeping chocolate at a certain temperature and not burning your chocolate or some other chocolate problems that you will encounter eventually without one!

The second way is using a double boiler which I did tonight as I lent my melting pot to a friend over the holidays. In this method you need a small pot and bowl that fits snugly in without touching the bottom! This is critical as you don't want your chocolate to burn. Fill the pot with an inch of water and place the bown in. It should fit snugly and not let steam escape. Add your chocolate into the water and get a baking spatula to stir. Boil the water then turn down the burner to a low boil. Stir chocolate until melted.

Be careful of a few things. Chocolate can get quite hot and burn skin. Watch that your chocolate doesn't overheat as it can also seize. Seizing is when the chocolate goes playdough like and in this state it will no longer melt. Water can also seize chocolate so be careful especially when using the double boiler!

Piping bag tip is also pictured! Use a large cup and place the bag inside and pull down the side of the cup before filling. Makes things sooooo much easier!

I just LOVE how the colour turned out. It was hard to capture how vibrant they came out in the cupcakes!

This was the 8th year I have made this girls birthday cake and every year it is a different special request...this year was BUBBLEGUM flavour!

Anyone in the area want some free leftover icing? We made too much and would rather it not go to waste! (Bags are pictured in previous post.)
