How raw is your raw honey....
Just the way the bees eat it! Let us share a little with you about raw honey. Honey is raw until a temperature of 104F/40C. This is the peak internal temp a hive can even sometimes reach. At this temp all the beneficial enzymes that provide natural antimicrobial defenses, assist in breaking down complex carbohydrates, and support digestion, are still active. While excessively heating the honey destroys these delicate proteins. Such as pasteurization (at a temp of 160F/72C).
We extract the honey raw while maintaining that warmer temperature of >35C for improved extracting flow efficiency. This honey we bring into the honeyhouse to have available on tap for your jar and pail refills. Most of our tanks have a heat loop built in, so to keep the honey from crystalizing we maitain a temp. range between 35-45C.
The raw honey on the other hand is stored cold and therefore it is prone to crystallizing much quicker in the tank. So that's why our raw honey refill time is limited to October when the cooler temperatures induce faster crystallization. We keep raw honey available year round prefilled in jars and some pails.
