One of the best delicacies you can get from a fish is the cheek meat. It tastes so different than the rest of the fish. It takes a bit of work to get at it but so worth it!

Got myself a wrist injury so I decided to put a bilge pump on my older fin and see what it could do. I was only hoping for “paddle assist” speed but managed to get 2.4km per hour and spent a half hour trolling a fly. It was also no wind today but I could fish aaaallllll day now hahaaha

The battery is a 100ah lifepo4 and is so amazingly light. Really happy with how this turned out I might order a slightly larger bilge pump.

The recipe:
2 cups of brown sugar5 cup of kosher salt

Cover the salmon with the sugar and salt with the meat facing down either in ziplock bags or in a tray. Do this for 24 hours and liquid will start to pull out of the meat. I like to flip the ziplocks over and move the liquid around every few hours or so.

Smoked for 2.5 hours
