"Fresh flowers are only going to die, so I don't want to spend alot on my wedding florals"
That is correct your fresh flowers will not last and will die, but when you look at the entire picture as a whole, nothing from your wedding day is going last forever, except your marriage and love for one another.
The food at your wedding gets eaten, your decor gets used but once, you wear your dress once and the stationery gets looked at for a second or two.
Yes, fresh flowers may be a luxury item for your wedding day but you deserve to have all the beauty for your day which includes your florals.
Budgeting for your florals should be a part of your planning and to think about it as just part of the day not what last the longest as most of the planned things for your day don't really last forever.
