Keto Fine Chocolate - VEGAN Passion Fruit Cardamom Bonbons

No dairy. No sugar. No alcohol. (See previous post about this as an option).

The passion fruit ganache filling is roughly based on a coconut filling by Wybauw in his classic book Fine Chocolates - Gold.

Experimenting with recipes and creating my own keto versions are two reasons I am so passionate about working with chocolate.

Keto Fine Chocolate - Vegan Keto Chocolate Raspberry Truffles

No dairy. No sugar. No alcohol (scroll down to see why).

Made with organic raspberries; MonKKey Venezuelan MilKeto chocolate; coconut milk; my organic ginger, and a touch of monk fruit juice concentrate.

Rolled in Venezuelan natural cocoa powder 🇨🇦 and dried raspberry powder 🇨🇦.

Creamy soft. Tangy. Rich Venezuelan chocolate.

I've modified this recipe so many times that I've lost track of the original recipe.

Question was asked: what's the deal about no alcohol?
Alcohol is often used in making ganache to extend shelf life and add flavour. For people who can't consume alcohol for health or religious reasons, I like to provide more options.
