It time to reshare my absolute FAVOURITE summer salad, not least because I can get everything (except the dressing and feta) right outside my door at the Farm Store. It's the epitome of summer, easy to make, and impressive enough that people don't know how quickly it comes together.

CORN, PEACH & BASIL SALAD with BALSAMIC, HONEY & LIME DRESSING

Ingredients:
-3 chopped peaches (or nectarines - great for using any that are cracked or have small yucky spots)
-1 chopped english cucumber
-1 pint cherry tomatoes, halved
-red onion, or I sometimes substitute green onions
-3 ears of corn, cooked and cooled with kernels cut off
-3 oz feta
-1/2 cup chopped basil.

Dressing:
-1 Tbsp balsamic vinegar
-2 Tbsp lime juice
-1 Tbsp honey
-1 Tbsp olive oil
-1/2 tsp salt
-1/2 tsp pepper.

Whisk together and pour over salad.
Keeps well for a day or two in the fridge. Also, I play very fast and loose with ratios of the vegetables and fruit and it's always great. And it's a great way to use day old corn if you've cooked too many (just me?). In fact, it comes together even quicker if you don't have to boil the corn.
The On Farm Store is open 9-6 everyday and is veritably loaded with the best of summertime foods: Tomatoes, cucumbers, sweet corn, peaches, plums, nectarines, beans, zucchini, eggplant, plus flowers and much much more.

It takes a lot for me to be impressed with a new variety, but this Emerald Towers Basil does not disappoint! I put it in a 12” pot (and it was a very sad, leftover transplant) and it’s been living in the greenhouse to help repel tomato hornworms since then. It hasn’t even thought about flowering or going bitter. The second photo shows a 4” transplant for comparison, and the third ones shows it next to a 5” 8’ tomato plant for comparison, when I harvest it, it lasts for days in a cup of water on the counter (PSA: you should always store your basil in a glass of water at room temperature, never in the fridge). And did I mention that that is one single plant? If you love basil, you will want to add one to your list for next spring, or we have a few left for sale at the Farm store.
