We were honoured to have been invited to participate in the Taste of Unity dinner, in honour of the victims of Lapu Lapu Day Tragedy in Vancouver.
Our dish was inspired by one of our hero’s, Lapu Lapu himself, who was the chief of Mactan in Cebu. To honour where he came from we chose to champion the Mango, because Cebu is known around the world to have some of the best mangoes.
We did a Mango Sansrival, three layered cake to resemble the three major islands coming together. We also wanted to highlight our mother tongue in some way and we chose by the symbol of “ka” in Baybayin, it is also a symbol that symbolizes “Magkaisa” meaning to unite. We made sheets of meringue and broke them into little pieces and wrote the symbol, but each piece when put together makes a whole. For us, that’s what unity is about. Being only a piece of a larger picture and when unified we stand stronger.
