After weeks of looking after the precious cocoa pod that handed off to me we were able to create these delicious caramels topped with smoked salt and roasted nibs.
It was a team effort; years of caring for the growth of the pod, harvesting, fermenting, drying, roasting and grinding.
None of which would have been possible without the help of the 🦋’s 😉
