Tempering chocolate is an essential step for any confection.

Discovered in 1847 by Joseph Fry, it gives chocolate its glossy finish, makes it "snap" when you breath a piece and prevents chocolate from melting on your fingers.

To temper chocolate means to heat it to a certain temperature, breaking down the structure of chocolate and to cool it allowing the correct crystals to form.
