🥂An evening of caviar, cuisine, and coastal elegance at Sanya, Hainan of China
Nestled along the pristine coastline of Sun Bay, Park Hyatt Sanya Sunny Bay offers one of Hainan’s most secluded luxury escapes — a place where natural beauty, refined hospitality, and culinary artistry come together.
Against this breathtaking backdrop, we presented our Caviar Series Dinner | Sanya Edition, an exclusive culinary experience created to explore the endless possibilities of caviar within contemporary Chinese cuisine.
More than a dinner, the evening served as a platform for culinary exchange — bringing together chefs, hospitality professionals, and industry leaders to share insights on caviar applications, flavor innovation, and the future of fine dining experiences.
Inspired by the landscape of Hainan, the bespoke menu featured six varieties of Fusta Caviar, paired with local treasures including Wanning scallops, Hele crab, Lingao winter melon, and king crab:

·Huso Dauricus Caviar | ‘Danzhou’ wax gourd, dill oil

·Baerii Caviar | Poached wrasse grouper, tamarind, wild vegetables, chicken oil
·Huso Dauricus Caviar | Braised ‘Hele’ crab, fish maw
·Schrenckii Caviar | Deep-fried Iberico pork, scallion chips
·Ossetra Caviar | Char-grilled king crab leg, chicken oil glutinous rice
·Le Cinq Caviar | Peach melba parfait
