Why does cacao quality change everything? Here is what most people don't know. 👇
The cacao is the flavor. Unlike w**e, where the w**emaker can intervene heavily after harvest, chocolate is largely made or lost in the field. The genetics of the tree, the health of the soil, the timing of the harvest - these determine what flavor is possible before a single bean reaches the factory.
Fine-flavor cacao is rare. Less than 8% of global cacao production is classified as fine flavor. It requires specific varieties, careful farming, and meticulous post-harvest handling. Most commercial chocolate skips all of this and compensates with sugar, vanilla, and emulsifiers.
Process protects what the cacao built. Fermentation develops precursor flavor compounds. Sun drying preserves them. Roasting unlocks them. Tempering and molding give them a final form. At every step, the goal is the same: protect what the cacao already contains.
Our cacao grows on our own farm. In volcanic Costa Rican soil. Under rainforest canopy. Tended without synthetic chemicals. Harvested by hand.
A Maleku bar is the result of caring deeply at every single step - from the tree to your hands. 🌿
