Vielen Dank an alle, die mich seit 2017 auf dem Weg begleitet haben. Danke an die Kunden, an die Winzer und an die Technikfüchse von dpop aus Jena, die mein stetes Genörgel aushalten müssen. Schauen wir mal, was in den nächsten 7 Jahren so Spannendes auf uns wartet! Merci, ich hab Euch gern und geb weiterhin für Euch Vollgas!

P.S. Danke auch an Alice und Harald für den Artikel. Hab schon eine etwas geschwollene Brust.

.. from you lovely people! Thanks Thomas, thanks Geraldine and thank YOU! Yes, I'm talking to you. Without you nothing would work the way it did since May 2017. You all are pieces of the wonderful puzzle! It was a rough ride, but we had fun and at the end of the year you look back and tend to get a bit emotional. So: Thank you and we'll have some fun in 2024 too. I'm pretty sure!

2ND AND LAST DAY OF THE...
.. Hugel family cook-off. What should I say... I'm pretty stuffed and there is just a little empty gap to fill this evening. After this, I'm pretty sure, I won't eat anything this year...

The first dish was some home salted and spiced raw Deer loin with pickled Cranberries, salad and Porcino-Mayo.
The second dish was a plain and simple Hummer Bisque.
Both paired with the Abendrot from Thomas.

The main dish was goose from Max. The goose had, if I count on the quality of the meat, the best possible life. Great goose paired with my last bottle of the limited edition Kékfrankos from Franz.

The last dish was a homemade Mousse au Chocolat (black & withe) and some Sour Cherry Sorbet (with a lil bit of Kirsch from Florian Faude). This has been paired with the 2019. Amazing!

FIRST CHRISTMAS FEAST 2023

Warm Smoked Trout with Salad. Foie Gras filled Morels on Brioche with Mushroom Consommée. Both paired with the IN HAIDEN Traminer from Herbert Zillinger.

Some low and slow cooked Duck with some sides as the main dish along with the Jaroslav Springer Čtvrtě Pinot Noir. Great!

For the end of the menu, I made some Cinnamon Ice-cream, reduced Aceto di Balsamico, plums and old Parmigiano.

Many thanks to my mom, who eliminates the chaos I caused in the kitchen!

ABOUT LAST NIGHT

Yesterday, I was invited to a small birthday get-together of a good friend of mine. His wife made some nice salad and stuffed zucchini, I made a tatar with mustard ice cream and we had magnificent wines with it. Outstanding: 2014 Châteauneuf-du-Pape Cuvée Marie Beurrier Hommage a Henri Bonneau. Incredible wine! Thank you Flori & Astrid! ❤️

Franz, Martin & Crew, wine people,
thank you very much for this amazing evening! The food, the wines, the talks, the atmosphere, the service – everything was just amazing and lovely. To experience sitting on a long table with people who don't know each other in the beginning and become friends in the end is one of the best parts of my job. The Heiderand Weinplausch with Franz Weninger was simply one of my highlights this year. Thanks to all participants!
