Spurdough testing... using Mockmill Profesional 200, Rofco B40 and passion!:)

Test and trial using Mockmill milled wholewheat and wholewheat rye 20% mixed with 650 white flour. 81% hydration. Baked in our Rofco B40 oven. Good test.. Ate more than half in one go;):) beautifull aromas developed from the freshly milled flour and an incredible glossy texture on the inside.
