The Eymann family were biodynamic trailblazers in Germany long before it was fashionable and today, Vincent Eymann continues to evolve and refine the wines at his family domaine with each vintage. Vincent’s approach in the cellar is shaped by spontaneous fermentations, gentle pressing and zero additions during vinification, except for small amounts of sulphur.

Just landed in Denmark are three newly refreshed wines, each with their new labels:

🍋 2023 Riesling Alte Reben: From vines up to 90 years old, this is layered a precise, with a fine salty edge.

🧈 2024 Chardonnay Alte Reben: A small-production cuvée that looks to Burgundy for inspiration. Textured with lemon pastry and a subtle, flinty reduction.

🍾 Cuvée Extra-brut No. 422: 30 months on the lees with only 2g/L dosage and giving mirabelle plums, brioche and a light herbal complexity. Approachable already, with a little briny note and very fine mousse.

Get in touch via DM or email to arrange a tasting or feel free stop by our office at Snaregade 6 to pick up some bottles in time for Easter! 🐣

2025 Vintage Preview • Weingut Egon Müller • 25.02.2026

We had the great pleasure of welcoming Egon and Isabelle Müller to today for the first tasting and preview of the 2025 vintage outside of the winery.

Described by Egon himself as “very very interesting,” 2025 was spoken of in the same breath as great vintages like 2005, 2010 and 2015. Expectations were naturally high but the wines totally delivered, showing a brilliant intensity without weight, racy acids and soaring fruit - a masterclass in Saar elegance.

Wines:

2023 Scharzhof
2025 Scharzhofberger Kabinett
2025 Scharzhofberger Spätlese
2025 Scharzhofberger Auslese Goldkapsel

The 2025s are set to land in May ✨

2023 Vintage Tasting & Escoffier Dinner (Bordeaux Paulée) • 28.02.2026

Join us on Saturday, 28th February 2026, at Axelborg for the first tastings of the highly acclaimed Bordeaux 203 vintage.

Bordeaux is embracing a fresh and vibrant identity, and the wines are increasingly refined, expressive, and precise. The 2023 growing season was marked by warmth, tempered by generous summer cloud cover and ultimately yielded wines of depth and complexity, lifted by an unexpected freshness. Across the region, the châteaux’s continued progress in sustainable viticulture and meticulous winemaking - with many now working organically or biodynamically - has once again proven decisive, echoing the successes already seen in 2022.

We will have the pleasure of welcoming Peter Sisseck of Château Rocheyron and Emeric Petit of Château Tournefeuille together with many of their colleagues from other leading Châteaux who will be on hand to present their wines to you.

🕰️ Program

nénu - vin de deux mains (Rasmus Aamand Olesen)

Meet Rasmus Aamand Olesen - the talented Danish winemaker from Vejle who crafts his distinctive nénu wines under the southern French sun in Collioure and Banyuls-sur-Mer.

Since 2017, Rasmus has transformed four hectares of vines into living, soulful wines full of personality - growing Mourvèdre, Grenache Noir, Grenache Blanc, Grenache Gris, and Syrah among the mountains overlooking the Mediterranean Sea.

Here, the cool sea breeze meets the warmth of the slopes, giving grapes both freshness and ripeness. The result? Wines with fine, ripe tannins, bright acidity, and a gentle whisper of salty minerality.

Everything is done naturally - the only addition is a small touch of sulphur, if needed.

As Rasmus says:

“Why buy freeze-dried yeast from the industry when our own soil gives us everything we need?”

Join us at Restaurant VIE in Copenhagen on Friday 24th October and Munkebjerg Hotel in Vejle on Saturday 25th October for two tastings and dinners where Rasmus will share his story and philosophy behind the wines.

📍 Restaurant VIE, Århusgade 128E, 2150 København

📍 Munkebjerg Hotel, Munkebjergvej 125, 7100 Vejle

Versteigerung Tasting coming up!

The German wine auction based in Trier has a long history. Since 1908, wine merchants and importers from all over the world are gathering once a year in Trier to take a chance on some of the most prestigious classic wines that Germany has to offer.

Traditionally, top producers, especially from Mosel, Ruwer and Saar, would send their best barrels to the auction, that would usually fetch many times the price of other wines from the same grower.

As we rarely get to taste these wines ourselves, we are all the more excited to share them with you.

At this tasting, you will have the opportunity to sample „Versteigerungsweine“ and other mature rarities from the likes of Eva Fricke, Peter Jakob Kühn, Wwe. Dr. H. Thanisch, and Egon Müller.

Time & Place:
Friday, 27th June • 15:00

Tickets are limited and can be purchased via the link in our bio. We look forward to seeing you there!

Maison Dalí by Tristin Farmer will be taking residency in Tivoli’s Japanese Pagoda this summer. The leading Scottish chef has contributed to culinary awards at numerous restaurants including Gordon Ramsay and Zén, where he blended Nordic and Japanese cuisine which eventually brought 3 Michelin stars to the Singapore-based restaurant.

Maison Dalí honours the famous Spanish artist Salvador Dalí whose surreal talent extended to visualising some of the world’s greatest wines in his art.

In this connection, we will be hosting a Dalí-themed dinner to showcase and explore ten such wines, paired with Tristin Farmer’s cuisine. The bottles selected date back to 1962 and include four of Bordeaux’s 1er Grand Cru Classés, Domaine de la Romanée Conti’s Romanée Saint Vivant.

Date & Time: July 2nd · 18:00

Tickets can be purchased via the link in our bio.

German Weinfest #1 • Producer #7

Maximin Grünhaus is one of the leading wineries at the Ruwer which belongs to the overall region of Mosel. Run by the family von Schubert since 1882, the history of Maximin Grünhaus goes back to the year 966.

Grünhaus is one of the few wineries in the world privileged to own solely monopol vineyards: Abtsberg, Herrenberg, and Bruderberg, all located on the same picturesque hill.

Abtsberg is the warmest and most renowned, covering 14 hectares where the vines grow in blue Devonian slate, at a steep gradient of 75 degrees. All of the vineyards produce wines of great longevity. While Herrenberg tends to yield a more generous and approachable style, Abtsberg stands for a maximum of expressiveness, particularly in its Riesling but also its Pinot Noir.

In the cellar, Grünhaus ferments spontaneously and vinifies most of their wines in traditional Mosel fudre barrels (1000l) which are being used for decades. These are made of oak that they plant themselves in the Grünhaus forest, where these trees take up to 200 years to grow.

Are you curious about trying Grünhaus’ wines and those from our seven other talented growers? If the answer’s yes, you can book your ticket for our German Weinfest and winemakers dinner with all attending growers (both on 5th April) via the link in our bio! 🍷
