Temperature of the Wine
WINE SERVICE TEMPERATURE
1- Red wines :
Tasting a wine at the right temperature is essential to appreciate all the contours. Aromatic, of course, but also and above all, tactile.
A wine served too cold will be atrophied, aggressive and will therefore lose all its fragrant faculties and especially gustative and tactile. Nothing serious, on the contrary in the case of bad wines. Very boring about tasty wines.
It is therefore essential to serve the wine at the best service temperature in order to reveal all its contours ...
It is essential to understand that the more opulent and tannic the wines the higher the service temperature should be. Tannins and alcohol are to looked at carefully
Too cold temperature breaks them and retracts the aromas.
For a wine served beyond 19/20 °, the alcohol will be put forward, and the wine will find warm, annoying to the tasting.!!!!
I therefore believe that in general a red wine should be served @ 16 /17 degrees max.
2- whites and sparkling wines :
At a glance this article below would be a good summary
- Lighter white wines are served the chilled, between 7-10 ̊ C ( ex a Sauvignon from Loire Valley or New Zealand Sauvignon )
- White wines with more body, or oak, should be served at a warmer temperature of 10-13 ̊ C (ex a cru from Bourgogne or a top white from California or Austria
Sparkling wines are best served well chilled, at 6 – 10 ̊ C (champagne or Crémant)
Conclusion :
For this who can ( this is not too expansive ) buy a wine fridge !
For those who don't have the room or place : put your wines ( red ) open for 45 min before drinking in your fridge
For whites ( wine fridge using the white section ) or fridge respecting the above instructions for white wines ) put them 2 hours at least in advance
If you don't have a wine fridge remember to keep your wines in a stable temperature and in the obscurity.
Even for small and cheap wines the above principles are fundamental and will give you a different experience
What is the best white wine temperature...?
