We have been working hard in the workshop for the last couple of weeks sorting, roasting, grinding and chopping a new harvest of cacao beans.

We're so eager to announce that we're now filling our shelves with freshly made cacao. It is soft. It is gentle. It is tastes amazing with both earthy and floral notes. We are grateful. And our webshop re-opens on Tueday.

This is Daniel South, our dear friend and farmer since 2017. He grows a tiny, 2 hectare permaculture cacao farm in the lush, tropical rainforest on the Caribbean side of Costa Rica.

His trees were planted in a biodiverse ecosystem among banana and papaya trees, and the only fertiliser used is compost from those trees that he spreads around the trunks of his cacao trees.

Whereas many of the local indigenous tribes in the area that also grow cacao actually get their seedling from a government supported program that uses a new hybridized and disease resistant variety, Daniel's trees are of an heirloom Forastero type named Matina. He calls them "old beans" and he got his seedlings from friends and family deep in the jungle.

We roast his beans not too light and not too dark giving them a deep, woody flavour but with subtle flowery notes of bergamotte. 🤤🤤

Then we gently grind the beans between granite stones until just perfectly smooth giving the final cacao our beloved silky texture.

“Ceremonial grade” is not a protected label and there is no official definition to what it really is.

The term is mostly used by people who drink cacao for spiritual and self development purposes. It is used to describe the purest possible cacao drink.

So whether you drink cacao in ceremonies or just for the health benefits “Ceremonial Grade” is indeed a label of quality!

For us at Evolve Cacao our “Ceremonial Grade” label means:

1) Old variety heirloom cacao beans grown in the rainforest according to biodynamic standards. This means no hybrids and no mono cropped cacao fields. Probably less than 2% of the World's total cacao production live up to this critirion.

2) Directly traded with 100% traceability to the farmer.

3) Light, natural fermentation and sun drying of the cacao beans at the farm. No artificial warehouse drying and no additives to affect the fermentation.

4) Minimally processed and made by US! This means hand-sorting the beans, light roasting over open fire and gentle grinding in a stone grinder.

5) Nothing added and nothing removed. Well maybe we could add some wild harvested herbs or a few organic spices at some point.. 😍

6) As a bonus we have put a lot of pure intention, deep gratitude and heart felt love into every single bean we have held in our hands because we believe all things are energy and this energy will do you good! 💫💫

A cup of cacao is an amazing kickstarter to open your heart, increase your focus and connect to your soul.

Your intention is the foundation for your experience. Spend a few moments to feel why you intend to sit right here. Connect yourself with gratitude to the energies of this alchemical plant and allow whatever visions, guidance and ideas that come up in your consciousness to flow and inspire you.

Breathe Intentionally in a coherent rhythm until you feel relaxed. Take in the scent of cacao and sip it gratefully and slowly while you keep your intention conscious.

Pay attention to your physical body and its state.

Pay attention to any answers or images that present themselves in your mind.

You have now calmed your body down to its natural rhythm and your heart can open wide and receive universal Love.

Through this state you will feel a sense of Wholeness that leaves you content and unified with All that is.

You are now fulfilled and complete. Joyful. Sit with this for a while and give thanks to the plant and its sacred gift.

The known history of cacao goes all the way back to the earliest Meso American civilization, the Olmecs and later the Mayans and the Aztecs.

Common to all the cultures is that they made a drink of it.

It was (and still is!) partly used as lunch in the fields by hardworking farmers who mixed it with corn into a wholesome drink.

But it was also used as a sacred drink in ceremonies due to its mild, psychoactive and heart opening properties. This drink was not the sweet hot chocolate we know today, but an intense drink often made with spices.

In the 16th. century the Spanish conquerors took the sacred drink to Europe where it quickly became a favourite by the royalty. To sweeten the intense flavour the Europeans began adding sugar and honey to it.

With its popularity came demand and exploitation started. Cacao plantations spread across tropical colonies, as did a fast growing slave market. Machines were developed for a more efficient production and big industry grew.

The word "cocoa" was invented and is still today the English industry term for all altered states of the cacao fruit. When it is ground into nibs, processed into a paste, a liquor or a powder as a raw ingredient in chocolate making, cacao becomes cocoa.

In the mid 1800s Englishman Joseph Fry discovered a way to mould chocolate into solid bars, and the first real chocolate factory was born. Then came milk and later white chocolate and the rest is history…

Today big industry chocolate making and cacao growing is a sad story involving both child labor, mono cropping, intensive use of chemicals and heavy post processing. ☹️

On the bright side however a small revolution has started to take chocolate back to its original roots as a potent and sacred drink, honoring its true essence and spirit.

Our cacao is grown, fermented and sun dried by Daniel South in his tiny farm in the lush Costa Rican rainforest with simple, traditional techniques and cacao compost as the only fertilizer. Then gently roasted and ground into a liquid by us to merge old and new in perfect harmony.

The result is much more than chocolate. It is 100% pure cacao with a 100% transparent supply chain made with 100% love. 💙🌴

Dear friends. For those who haven't met us yet we are Mads & Mia, husband & wife, partners through 24 years and co-creators of Evolve Cacao. This product is the result of a lifelong journey but we feel we are just getting started. 💫😍

Our vision is big and every time we pack a bag of cacao and send it to you we are one step closer to our goal. We are so full of gratitude and we wish to thank you all deeply for your support.

It is said that once back in the jungle before we separated the sacred and the thing, men and women took cacao with them on their journeys to hunt and gather. It is a brilliant nutrient to fulfill and sustain energy for a full days labour. And at the end of the day the human “thank you” is obvious because of the surrendered state and enjoyment of life. Today we tend to separate ourselves spiritually. As if it is outside of us. Something to attain. Cacao is made for us as much as we are communed with already. So it is all a matter of how you relate with. Cacao is a wild plant with Vibrantly colored fruits, abundantly producing. It is a stimulant, a medicine and a spirit. You are welcome to relate in any way that soothes you. It may for you be a no stress quicker upper, a heart-body-mind healer or a deeply thanksgiving to earth. However you relate, cacao says yes. She will be part of your journey home wherever your starting point is. Hence “evolve”. ➰
