Why freezing ci**rs is problematic.
To***co leaves contain living cell structures, sugars, oils, and aromatic substances.
When frozen, ice crystals break down the cell walls.
After thawing:
The leaf structure is slightly damaged → becomes more brittle or fragile
The natural maturation processes (fermentative and chemical transformations during storage) are interrupted or greatly slowed down
Long-term storage hardly improves the aroma
