Esta mañana disfrutamos en de una bellisima ceremonia de té Gong Fu con un grupo muy mixto que venian de tan lejos como Vietnam, Argentina y Talavera, Toledo y una pareja que llevan viniendo a la teteria desde nuestros inicios hace 20 años y que justo hoy celebraron su primera Ceremonia del Té.

Celebramos esta ocasión tan irrepetible con un té singular que ganó Medalla de Oro en Taiwan.... un Gui Fei Oolong (Concubina Real) que nos sedujo a todos con su perfume persistente y su perpetua dulzura.

Gui Fei, como Belleza Oriental o Mi Xian son tés veraniegas especiales que requieren una visita de una plaga de bichitos muy majos que hacen que estos tés sean tan dulces y seductores. Allí lo dejo...

This morning we enjoyed a delightfully peaceful Gong Fu tea ceremony with a very mixed group who came from as far away as Vietnam, Argentina and Talavera, Toledo and a couple who have been coming to the tea shop since our inception 20 years ago and who just today celebrated their very first Tea Ceremony.

We celebrated this unique occasion with an amazing tea that won Gold Medal in Taiwan... a Gui Fei Oolong (Royal Concubine) that seduced us all with its persistent perfume and perpetual sweetness.

Gui Fei, like Oriental Beauty or Mi Xian are special summer teas that require a visit from a plague of very dear little insects that cause these teas to be so sweet and seductive. Words do no justice.

Yesterday's private Gong Fu Tea Ceremony for a family of artists.

Normally I wait until the very morning of a ceremony to determine the tea we will be serving. If it's an afternoon or evening ceremony I often wait until just a few hours or less before to feel which tea is most appropriate for the occasion.

It's a question of inspiration and not trying to interfere with my mind but for the right tea to emerge somehow.

On this occasion, I was leaning toward a Wuyi Oolong but something wasn't right. So I had a backup plan. Very strange for me.

Well... once the guests arrived I quickly learned, without my asking, that one of them had an aversion to traditional charcoal roasted oolong. And parallelally, I learned they were really intrigued to learn more about fermented tea.

And that's what I had beside me.... a 20 year old Sheng Puerh that waited 20 years to teach us all a lesson in tea patience and the benefits of exploring a tea all the way to its final end. I don't know how many steeping we did... but they were enough to remind me of an old saying of my own...

If you think you don't like Sheng Puerh... take it as far as you can, for as many steeping as you can, try to take it to its end and by then you are likely to lpve Sheng Puerh... or at the very least, you will understand Sheng Puerh. Sheng Puerh is the tea with the most patience of all .... see of you have the patience to stay with it until it can give no me of itself. So many lessons. Thank you, guests! This Way of Tea is always teaching!

¡Qué alegría compartir el té con personas tan bellas, amigas tan cercanas y amorosas! ¡Acabamos de celebrar una maravillosa ceremonia de Gong Fu para 2 amigas celebrando una exitosa recuperación de su salud!

Para esta ceremonia seleccionamos un té oolong tostado al carbón del interior del Parque Nacional Wuyi de la variedad Qi Lan. Honramos este tipo de té Zheng Yan con la preparación De té Gong Fu porque es la mejor manera de hacerlo brillar. De hecho, la Preparación de Té Gong Fu evolucionó para elaborar mejor el Wuyi Oolong procesado tradicionalmente.

Such a joy to share tea with beautiful people! We just held a wonderful Gong Fu ceremony forr 2 friends celebrating a succesful recivery to health!

For this ceremony we chose an inner Park, Zheng Yan, Wuyi Qi Lan charcoal roasted oolong tea. This is the kind of tea that is truly meant to be brewed Gong Fu. In fact Gong Fu brewing evolved to best brew traditionally processed Wuyi Oolong!

So nice to host this private ceremony near Montserrat! How wonderful to inaugurate a new space and help plant the seed of presence and mindfulness there.
