We first discovered craft chocolate in, of all places, a vintage furniture shop in Los Angeles. The incredible flavors we tasted in those bars completely changed how we thought about chocolate, and started us on our journey to become single origin chocolate makers. We’re often asked “why single origin?” and the answer is simple – much like coffee, different cacao beans have different flavors. By u

sing beans sourced from only one farm or region we’re able to highlight the distinct flavor characteristics of that particular bean. Discovering those flavors is one of the joys of making (and eating!) single origin chocolate. We’ve spent a lot of time on farms in Mexico and Central America searching for the most flavorful beans, and have developed direct relationships with the farmers who grow and harvest them. By dealing directly with farmers we’re able to ensure that they’re fairly compensated for their cacao, and also that the farming practices they’re using are sustainable. All of our bars are made here at our 225 year old farm in Sudbury, Massachusetts. We start with cacao beans and sugar, and perform every step of the chocolate making process in-house, including carefully hand wrapping each bar. We believe that great chocolate is “true to the bean,” in that the flavors apparent in the bar reflect the flavors hidden in the bean. The process of making this happen is extremely time consuming and labor intensive, but we believe the experience of eating our chocolate makes it all worthwhile. We’re very proud of our chocolate and we hope you enjoy eating it as much as we do making it. Please check back frequently as we’ll be adding exciting new origins and flavors on a regular basis!

Most chocolate is manufactured to achieve consistency. Bean to bar chocolate is made to preserve character 😋 😍

The difference begins with the cacao itself.

Mass-market chocolate is typically produced from large blends of cacao sourced from multiple regions, processed with standardized roasting, and often modified with ingredients or techniques designed to make large-scale manufacturing more efficient. The goal is to produce the same flavor, bar after bar, regardless of where the cacao came from.

Bean to bar chocolate follows a different approach.

At Goodnow Farms Chocolate, every chocolate bar starts with carefully sourced single-origin cacao. From roasting and grinding to molding and wrapping, every step happens in-house. Roasting profiles are developed specifically for each bean, cocoa butter is pressed from the same cacao used in the bars, and every decision is made with one goal 👉🏻 allowing the natural flavors of the cacao to speak for themselves 💯🍫

How do you define a fair price?

It's a question we think about every time we buy cacao.

🤔 Is it a price determined by a certification? Is it a price set by the market? Or should it be a price agreed upon by the people growing the cacao and the people buying it?

There's no simple answer, but it's one of the reasons we've always believed that understanding how cacao is sourced ia just as important as understanding how chocolate is made 😊🍫

The 2026 Good Food Awards were announced recently and our Old Fashioned Root Beer Limited Release bar is a winner! We're proud to share that this is our 9th consecutive Good Food Awards winning bar.

The Good Food Awards is one of the most (and possibly THE most) respected awards in the craft food industry. It focuses not only on flavor and quality, but also on transparency and sustainability.

One of the reasons this award is so coveted is because very few are given out. The Good Food Awards breaks up the country into five regions, and each region is limited to three winners. For the full list of winners check out their 2026 Award Winners Page.

This bar is crafted with the very best ingredients, carefully recreating the flavors of old-fashioned root beer. They include Indian sarsaparilla, planifolia vanilla, birch bark, star anise, and more. It took a long time to get it right, but the delightfully satisfying end result was worth the effort! 😋😋😋

Back after a two year wait 🍫

This very special dark chocolate is made from ancient Criollo cacao grown by Giff Laube in Nicaragua, who has spent over a decade propagating these trees after discovering them in a remote jungle area and confirming their genetics through USDA testing (tree “Laube 1”).

After nearly ten years of work, these trees produced just one single sack of dried cacao 👉🏻 the only quantity available this year. Last year, there weren’t enough beans to make this bar at all 🥲

We made this small batch and we are the only chocolate maker working with these beans that are naturally white, extremely small, and require precise handling at every stage:

▫️Roast monitored continuously, tasting at one-minute intervals
▫️Conching evaluated hourly, stopping at peak flavor

🍫 Dark milk chocolate made with Guatemala Asochivite cacao (bright, fruit-forward), grown and processed by Q’eqchi Maya farmers in Chivite, who harvest from wild cacao trees and manage fermentation + drying using our custom protocols.

🍫 Freshly pressed, single origin cocoa butter (from the same beans — never deodorized) for deeper flavor and exceptional smoothness.

🍫 Organic whole milk from pasture-raised cows (antibiotic-free, GMO-free, rBST-free), sourced from family-run West Coast dairies with stable pricing for farmers.
