Parlons Cacao — Épisode 1 : Mono-cépage vs Mono-plantation
Parlons Cacao, pour mieux comprendre ce qui se cache derrière votre tablette 🍫
Aujourd'hui : mono-cépage ou mono-plantation, quelle est la différence ?
🍫 Mono-cépage (comme notre Porcelana) : une seule variété génétique, non mélangée, fermentée et séchée ensemble avant transformation.
🌱 Mono-plantation (comme notre Ocumare) : tout le cacao vient d'une seule plantation — mais plusieurs variétés peuvent y cohabiter, selon que les cacaoyers ont été reproduits par graine (génétique un peu différente pour chaque arbre) ou par greffage (même variété partout).
À retenir :
mono-cépage = une variété unique (comme un cépage en œnologie) ;
mono-plantation = une origine unique, qui peut regrouper plusieurs variétés.

Today: single-variety vs. single-plantation — what's the difference?
🍫 Single-variety / "mono-cépage" (like our Porcelana): one genetic variety, not mixed with any other, fermented and dried together before becoming chocolate. We have had others too, like Chuao 120 or Chuncho Pamuco.
🌱 Single-plantation / "mono-plantation" (like our Ocumare): all the cacao comes from one farm — but several genetic varieties can grow side by side there, depending on whether the trees were propagated by seed (each tree slightly different genetically) or by grafting (all trees share the same variety).
Bottom line: think w**e — "mono-cépage" is one grape variety, "mono-plantation" is one estate that can still hold several varieties 🌿
