This cauliflower tabbouleh is the perfect twist on a classic-crisp, herby, and refreshing 🥗

🕐 Ready in 25 minutes. You'll need (serves 4):
🥦 1/2 cauliflower
🍅 2 tomatoes
🥒 1 cucumber
🌿 1 bunch of parsley
🌱 1 bunch of mint
🧅 2 green onions
🍋 2 lemons
🫒 6 tbsp olive oil
🧂 Salt & pepper

How to make it:
1️⃣ Blend cauliflower florets until you get a fine, grain-like texture.
2️⃣ Dice the cucumber & tomatoes.
3️⃣ Finely chop parsley, mint & green onions.
4️⃣ Mix everything in a bowl, squeeze in lemon juice, and season.
5️⃣ Drizzle with olive oil, toss well & enjoy!
