The 2026 harvest is (already) coming to an end!

An extraordinary year for Champagne… We began harvest on August 18th and finished on August 26th, something never seen before for Claude Mandois.
This year, the heights of Pierry, our ancestral village, stand out for their remarkable sugar/acidity balance, on both the Chardonnay and the Pinot Meunier.
Thank you to the entire harvest team for their dedication, more to come from the cellar…

The countdown to harvest has already begun!

Claude and Luis are keeping a close eye on the first signs of ripening in the vineyards. Veraison marks the beginning of the final stage before harvest: our Chardonnay and Pinot Meunier grapes begin to change colour, develop greater aromatic richness and move a little closer to perfect ripeness each day.

✨ The final stage of winemaking before the harvest: tirage.
A key moment in the traditional method, tirage marks the beginning of the secondary fermentation. The wine is bottled with the liqueur de tirage and a yeast culture. This second fermentation in the bottle creates the characteristic effervescence of our champagnes.

1/ The yeast population in the culture is monitored by measuring its sugar concentration with a hydrometer
2/ The wine is bottled with the liqueur de tirage and the yeast culture
3/ The bottles are sealed with crown caps
4/ They are stacked onto pallets and transferred to the cellars, where they will age on their lees for several years
5/ & 6/ The tanks are cleaned and prepared for the next harvest.

A precise process in which expertise ultimately gives way to time.
